Amherst in the World tells the story of how an institution that was founded to train Protestant ministers began educating new generations of industrialists, bankers, and political leaders with the decline in missionary ambitions after the Civil War. The contributors trace how what was a largely white school throughout the interwar years begins diversifying its student demographics after World War II and the War in Vietnam. The histories told here illuminate how Amherst has contended with slavery, wars, religion, coeducation, science, curriculum, town and gown relations, governance, and funding during its two centuries of existence. Through Amherst’s engagement with educational improvement in light of these historical undulations, it continually affirms both the vitality and the utility of a liberal arts education. Consumed around the world by millions, they appeal to young and old, affluent and impoverished alike. The authors examine the history, manufacturing, marketing, and consumption of instant noodles. By focusing on three specific markets, they reveal various ways in which these noodles enable diverse populations to manage their lives. The first market is in Japan, where instant noodles have facilitated a major transformation of post-war society, while undergoing a seemingly endless tweaking in flavors, toppings, and packaging in order to entice consumers. The second is in the United States, where instant noodles have become important to many groups including college students, their nostalgic parents, and prison inmates. The authors also take note of “heavy users,” a category of the chronically hard-pressed targeted by U.S. purveyors. The third is in Papua New Guinea, where instant noodles arrived only recently and are providing cheap food options to the urban poor, all the while transforming them into aspiring consumers. Finally, this study examines the global “Big Food” industry. As one of the food system’s singular achievements, the phenomenon of instant noodles provides insight into the pros and cons of global capitalist provisioning.

Book excerpt: In 1760, General Jeffery Amherst led the British campaign that captured Montreal and began the end of French colonial rule in North America. All Canada in the Hands of the British is a detailed account of Amherst’s successful military strategy and soldiers’ experiences on both sides. Newly promoted general Jeffery Amherst took command of British forces in North America in 1759 and soon secured victories at Fort Duquesne, Louisbourg, Quebec, Fort Ticonderoga, and Niagara. In 1760 William Pitt, head of the British government, commanded Amherst to eliminate French rule in Canada. During the ensuing campaign, Amherst confronted French resurgence at Quebec and mounted sieges at Isle aux Noix and Fort Lévis, both of which were made difficult by French strategic placements on nearby islands. As historian Douglas R. Cubbison demonstrates, however, Amherst was well before his time in strategy and tactics, and his forces crushed French resistance. In this first book-length study of Amherst’s campaign, Cubbison examines the three principal columns that Amherst’s army comprised, only one of which was under his direct command. Cubbison argues that Amherst’s success against the French relied on his employment of command, control, communications, and intelligence. Cubbison also shows how well Brigadier General James Murray’s use of what is today called population-centric counterinsurgency corresponded with Amherst’s strategic oversight and victory. Using archival materials, archaeological evidence, and the firsthand accounts of junior provincial soldiers, Cubbison takes us from the eighteenth-century antagonisms between the British and French in the New World through the Seven Years’ War, to the final siege and its historic significance for colonial Canada. In one of the most decisive victories of the Seven Years’ War, Amherst was able, after a mere four weeks, to claim all of Canada. All Canada in the Hands of the British will change how military historians and enthusiasts understand the nature of British colonial battle strategy.

Book excerpt: During 1763 and 1764, a loose coalition of Native American tribes ranging from the Appalachian Mountains to the Mississippi River and from the Ohio Valley to the Great Lakes revolted against the oppression and neglect of their newly installed British masters. This Great Uprising ranks among the most successful wars in Native American history with the assault and capture of nine forts, the siege of Forts Detroit and Pitt, and, finally, a negotiated peace that met most of their demands. Yet, the victories proved to be fleeting as tribal enthusiasm waned. Within a generation, another wave of settlers and a frontier war would conquer much of what the unfortunate tribes would cling to with their victory. There would be no simple solution to the conflict. Now nearly dependent on the white man's technology and trade, tribal leaders were forced to face the prospects of an uncertain future. Supplies captured from the forts would last only so long, and the war had diverted valuable manpower from the yearly hunt. While the British had managed to quell the uprising, they did so largely through diplomacy, and they paid a high political price with negotiations conceding nearly every tribal demand. However, within a generation yet another wave of settlers and a frontier war would conquer much of what the unfortunate tribes would cling to with their victory.
