Book excerpt: Abstract: The raw material requirements for frozen and quick-frozen foods, and developments in this fast-growing industry were discussed by 130 experts at an international symposium in Budapest, Hungary (April 1977). 13 papers were a basis of discussion of two principal topics: the main trends for development in the market for frozen and quick-frozen foods in eastern and western Europe, and the quality and marketing requirements of raw materials destined for processing into frozen food. 21 countries were represented. Symposium conclusions state: 1) income level influences amount of frozen food consumption; 2) consumption shows increase in most European countries; 3) more frozen food is being used in institutional feeding; 4) future growth depends on quality; 5) high quality raw materials are vital. There is need to improve concepts, classification, and coverage of statistics on production, trade, and consumption of frozen food.
