Book excerpt: How we produce and consume food has a bigger impact on Americans' well-being than any other human activity. The food industry is the largest sector of our economy; food touches everything from our health to the environment, climate change, economic inequality, and the federal budget. From the earliest developments of agriculture, a major goal has been to attain sufficient foods that provide the energy and the nutrients needed for a healthy, active life. Over time, food production, processing, marketing, and consumption have evolved and become highly complex. The challenges of improving the food system in the 21st century will require systemic approaches that take full account of social, economic, ecological, and evolutionary factors. Policy or business interventions involving a segment of the food system often have consequences beyond the original issue the intervention was meant to address. A Framework for Assessing Effects of the Food System develops an analytical framework for assessing effects associated with the ways in which food is grown, processed, distributed, marketed, retailed, and consumed in the United States. The framework will allow users to recognize effects across the full food system, consider all domains and dimensions of effects, account for systems dynamics and complexities, and choose appropriate methods for analysis. This report provides example applications of the framework based on complex questions that are currently under debate: consumption of a healthy and safe diet, food security, animal welfare, and preserving the environment and its resources. A Framework for Assessing Effects of the Food System describes the U.S. food system and provides a brief history of its evolution into the current system. This report identifies some of the real and potential implications of the current system in terms of its health, environmental, and socioeconomic effects along with a sense for the complexities of the system, potential metrics, and some of the data needs that are required to assess the effects. Book excerpt: Chemical fertilizers have had a significant impact on food production in the recent past, and are today an indispensable part of modern agriculture. On the other hand, the oil crisis of the 1970s and the current Middle East problems are constant reminders of the vulnerability of our fossil fuel dependent agriculture. There are vast areas of the developing world where N fertilizers are neither available nor affordable and, in most of these countries, balance of payment problems have resulted in the removal of N fertilizer subsidies. The external costs of environmental degradation and human health far exceed economic concerns. Input efficiency of N fertilizer is one of the lowest and, in turn, contributes substantially to environmental pollution. Nitrate in ground and surface waters and the threat to the stability of the ozone layer from gaseous oxides of nitrogen are major health and environmental concerns. The removal of large quantities of crop produce from the land also depletes soil of its native N reserves. Another concern is the decline in crop yields under continuous use of N fertilizers. These economic, environmental and production considerations dictate that biological alternatives which can augment, and in some cases replace, N fertilizers must be exploited. Long-term sustainability of agricultural systems must rely on the use and effective management of internal resources. The process of biological nitrogen fixation offers and economically attractive and ecologically sound means of reducing external nitrogen input and improving the quality and quantity of internal resources. In this book, we outline sustainability issues that dictate an increased use of biological nitrogen fixation and the constraints on its optimal use in agriculture.

Book excerpt: The study of soils today has taken on increased importance because a rapidly expanding population is placing demands on the soil never before experienced. This has led to an increase in land degradation. Land degradation is one of the most severe problems facing mankind. Volume 11 of Advances in Soil Science was devoted entirely to this critical area of soil science. From the beginning of agriculture until about 1950, increased food production came almost entirely from expanding the cropland base. Since 1950, however, the yield per unit of land area for major crops has increased dramatically. Much of the increase in yields was because of increased inputs of energy. Between 1950 and 1985, the farm tractor fleet quadrupled, world irrigated area tripled, and use of fertilizer increased ninefold. Between 1950 and 1985, the total energy used in world agriculture increased 6. 9 times. Until recently, sustainability was seldom, if ever, mentioned in agricultural literature. Now, it is one of the most widely used terms. The high costs ofirriga tion development, escalating energy costs during the 1970s, public concern over potential negative impacts of fertilizer and pesticides on water supplies, soil ero sion, soil compaction and salinity problems, and other concerns have caused many people to question whether many of the present agriculture systems can be sustained. As a result, soil science is beginning to focus more on sustaining the resource base.

We are witnessing wholesale exchanges of organisms among geographic areas that were once totally biologically isolated. We are seeing massive changes in landscape use that are creating even more abundant succes sional patches, reductions in population sizes, and in the worst cases, losses of species. There are many reasons for concern about these trends. One is that we unfortunately do not know in detail the conse quences of these massive alterations in terms of how the biosphere as a whole operates or even, for that matter, the functioning of localized ecosystems. We do know that the biosphere interacts strongly with the atmospheric composition, contributing to potential climate change. We also know that changes in vegetative cover greatly influence the hydrology and biochemistry ofa site or region. Our knowledge is weak in important details, however. How are the many services that ecosystems provide to humanity altered by modifications of ecosystem composition? Stated in another way, what is the role of individual species in ecosystem function? We are observing the selective as well as wholesale alteration in the composition of ecosystems. Do these alterations matter in respect to how ecosystems operate and provide services? This book represents the initial probing of this central ques tion. It will be followed by other volumes in this series examining in depth the functional role of biodiversity in various ecosystems of the world.
