Inorganic Matter Mineral Salts: to build bone in children, to aid digestion and to make food palatable. Salt, good water. Spinach, carrots, onions, greens, raw lettuce and raw vegetables. Household Hints Wash the sink and drain pipes with boiling water every day and once a week, wash and drain with strong solution of washing soda (sal soda). The drain of the icebox may be kept free in the same way. To Remove Stains Blood Stains: Wash in cold water, then in warm water and naphtha soap. Bluing: Wash in boiling water using a little vinegar. If the stain persists, try oxalic acid or 10% solution acetic acid. Coffee: Stretch material with spot over a bowl and pour boiling water through it from a height of two feet. Cocoa or Chocolate: Try cold water and soap. If not effective, soak in cold water and borax and pour on boiling water as for coffee stain. Open all the dampers. Bring sbav ings or paper, wood and coal. Cover the grate with shavings or loosely crumpled pieces of paper. Lay in crosswise small pieces of wood, and 011 top of these larger pieces, being careful to fill all the corners of the fire box. Leave spaces between for the passage of air, and light the fire from underneath. When the wood begins to burn put on coal, pressing the wood down to the grate; Add more coal after the first supply kindles. As soon as the fire burns freely close the back damper, and when the oven is hot close the front damper. Never allow the coal to come above the edge of the fire box. Every stove or range has, at least, two dampers; one to allow the air to pass up through the fire, another to allow the gas to escape up the chimney and to complete the circulation of air. When the oven is to be used, the dampers should be so regulated as to allow the heated air to pass around the oven. In making a fire one thing should be borne strictly in mind. Never pour coal-oil on the kindling to make it burn more freely or on the fire to give it new life. If you have it in View to do this you had better take poison at once, and avoid the more painful suicide of burning to death, which has been the fate of so many who had the habit of using this dangerous material. To keep the fire over night, close the front damper and leave the back one partly open; put on fresh coal and after it has kindled open the cooling doors to admit cold air over the fire. The stove is blackened to make it look well, to prevent it from rusting and to keep in the heat. Moisten the blacking with warm or cold water, making a paste about as thick as cream. Having managed a home of my own for twelve years and having lived in both the country and the city have probably given me a knowledge of the practical needs of the average home. Further than this, I am called upon reg ularly each week by 'phone to direct the culinary affairs of many Cleveland homes, thus giving me the practical experience which is lacking in so many teachers of Domestic Science. Furthermore, during the past five years I have delivered (and am still engaged in the lecture work) a series of over six hun dred public lectures on cooking, a larger number than ever before delivered on this subject by any woman in one place. These things have brought me in direct contact with thousands of people of all classes, given me a knowledge of their needs and at the same time fitted me for imparting this knowledge to others in a practical way. Having been principal of private 'schools and being at the present time a member of The Domestic Science and Art Association of Cleveland, and The American Home Economics Association of Chicago, and also! State Secretary of The Associated Clubs of Domestic Science has brought me in contact with many of our ablest instructors in Domestic Science and afforded me an excellent opportunity to get the best and most modern ideas relative to the science of cooking. These ideas I have endeavored to incorporate in this work, leaving out the technical things and making them practical for the home.
