Book excerpt: The processing of pork is a common technological practice that modifies the taste, flavor, texture and color of raw pork meat. Due to pork’s accessible price and versatility, the manufacture of pork products to offer a variety of options to consumers is an important strategy of the meat industries in this sector to improve profits and expand into new markets at the local, regional and international levels. The diversity of pork products reflects the diversity and history of many local cultures around the world, as well as a growing interest in preserving traditional processing practices. Pork: Meat Quality and Processed Meat Products delves into the various kinds of pork and the methods used to prepare it for consumption, including fresh meat products, fermented sausages, dry-cured products, blood sausages and cooked sausages. Each category starts with a specific raw material (entire cut vs. minced pork meat) to which is added a unique combination of ingredients (e.g., sodium chloride, starter cultures, blood, seasoning and spices). The method of processing (such as salting, drying, thermal processing and fermenting) takes consumer tastes and storage needs into account, as well as how each product will be consumed (cooked, sliced, spread and as an ingredient in other dishes, for instance). Consequently, a wide range of products made from pork are currently being produced worldwide. Added to this is the increasing importance of ingredients and health factors to consumers; the resulting demand for products that address specific health concerns is having a significant impact on research into and the production of pork meat products. Key Features: Comprehensively presents and discusses the wealth of information about pork products Includes specific details about the processing, quality of final products and innovation in the industry Presents innovative, health-oriented approaches to making traditional and commercial pork products Discusses healthier pork meat products that address consumer trends and government recommendations The production of health-oriented pork products is an emerging and promising investigation area with a direct impact on the currect market for meat products.

Book Halal and Kosher Food

Download or read book Halal and Kosher Food written by Osman Ahmed Osman and published by Springer Nature. This book was released on 2023-11-13 with total page 413 pages. Available in PDF, EPUB and Kindle. Book excerpt: In both Islamic and non-Islamic countries many population groups worldwide, such as vegetarians and people of the Jewish faith, consumers do not eat pork. Amongst these groups consumers are concerned about importing processed food which may contain or has been contaminated with pork or swine-derived products. This is especially true of halal foods in Muslim communities where the foods may be prepared or processed utilizing one of more non-halal ingredients. Halal and kosher foodstuff play an incredibly important role in the Muslim and Jewish diet, economy and health. This makes halal and kosher food product quality, safety and shelf life preservation a major topic in these communities and for the manufacturers of halal and kosher food products. Halal and Kosher Food: Integration of Quality and Safety for Global Market Trends covers a wide range of important topics in halal foods including quality, standards, safety of food additives, antimicrobial and veterinary drug residues, aflatoxin in feedstuff, application of Hazards Analysis and critical Control Points (HACCP). Important data regarding halal and kosher food similarities and differences are covered in full. Best practices in halal food product manufacturing are covered, plus the importance of halal food safety for consumer health. Written by elite international halal food experts, this work differs from other books on the subject which focus on history, legislation and certification. Readers can utilize this book as an orientation and practical guidebook to recognize the quality and safety of halal food products.

Book Sustainable Swine Nutrition

Download or read book Sustainable Swine Nutrition written by Lee I. Chiba and published by John Wiley & Sons. This book was released on 2023-01-10 with total page 757 pages. Available in PDF, EPUB and Kindle. Book excerpt: Sustainable Swine Nutrition As climate change continues to have a significant impact on the modern world, it is crucial to find alternative sources of energy and nutrients for swine production. The development of optimal feeding revolves around a multitude of considerations—genetic variations in the pig, variability, availability, and stability of nutrients in feed ingredients, interactions among nutrients and non-nutritive factors, voluntary feed intake, physical (& social) environment of pigs, and more. Establishing the ideal network of factors will only grow in importance as humans assess the methods for our own food networks. Sustainable Swine Nutrition is a comprehensive book on swine nutrition, covering some fundamental aspects of nutrition—namely digestive physiology, water, protein or amino acids, lipids, carbohydrates, energy metabolism, vitamins, minerals, and nutrition and immunology. Providing the most up-to-date information on each of these areas, a major emphasis of this second edition is on recent developments and current advances in the field, with a focus on pertinent issues linked with energy and nutrients. In doing so, the book highlights topics and issues that can contribute to the ultimate goal of successful and sustainable swine production. Sustainable Swine Nutrition readers will also find: Environmentally friendly, optimal feeding strategies for successful and sustainable swine production Recent developments, such as alternative feedstuffs, feed additives, and bioavailability Expanded treatment and new chapters on swine physiology, energy and protein, technology, and more Sustainable Swine Nutrition, Second Edition, is an ideal resource for livestock scientists and industry professionals involved in all aspects of pork production.

Book Refinements to Animal Models for Biomedical Research

Download or read book Refinements to Animal Models for Biomedical Research written by Gabrielle C. Musk and published by MDPI. This book was released on 2021-04-06 with total page 234 pages. Available in PDF, EPUB and Kindle. Book excerpt: There is some talk about an antibiotic Armageddon, wherein untreatable post-operative infections and similarly untreatable complications after chemotherapy will occur. The now famous “O’Neill Report” suggests that, by 2050, more people could die from resistant bacterial infections than from cancer. We are still learning about all the subtle drivers of antibiotic resistance, realizing that we need a single “whole health” coordinated policy. We ingest what we sometimes feed to animals, yet there does not seem to be any new classes of antibiotics on the horizon. Maybe there is something that has been around forever that could could to our rescue: bacteriophages. Nevertheless, we have to do things differently. We must use antibiotics appropriately and for the correct indication, duration, and dosage with good practice and stewardship.. While by no means comprehensive, this book covers many topics regarding antibiotic stewardship. It also addresses older antibiotics, new combinations, and even new agents. Last but not least, this book features two excellent articles on bacteriophages. Refinements to animal models used in research for either human or animal benefit must be an ongoing aim for anyone working in this context, whether it be as an animal carrier, an animal user, a veterinarian, or an official. Unfortunately, the details of refinements are often overlooked in publications describing the research outcomes. This book includes manuscripts published in the Animals Special Issue “Refinements to Animal Models for Biomedical Research”. In this contemporary resource, we included 12 peer-reviewed papers that cover a range of approaches to the concept of refinement.
