Available in PDF, EPUB and Kindle. Book excerpt: The Wisconsin Historical Society published Harva Hachten's The Flavor of Wisconsin in 1981. It immediately became an invaluable resource on Wisconsin foods and foodways. This updated and expanded edition explores the multitude of changes in the food culture since the 1980s. It will find new audiences while continuing to delight the book’s many fans. And it will stand as a legacy to author Harva Hachten, who was at work on the revised edition at the time of her death in April 2006. While in many ways the first edition of The Flavor of Wisconsin has stood the test of time very well, food-related culture and business have changed immensely in the twenty-five years since its publication. Well-known regional food expert and author Terese Allen examines aspects of food, cooking, and eating that have changed or emerged since the first edition, including the explosion of farmers' markets; organic farming and sustainability; the "slow food" movement; artisanal breads, dairy, herb growers, and the like; and how relatively recent immigrants have contributed to Wisconsin's remarkably rich food scene.

  • ISBN : 0813171334
  • Pages : 221 pages

Download or read book Profiles from the Kitchen written by Charles A. Baker-Clark and published by University Press of Kentucky. This book was released on 2006-07-01 with total page 221 pages. Available in PDF, EPUB and Kindle. Book excerpt: In an age where convenience often ranks above quality, many Americans have abandoned traditional recipes and methods of cooking for fast solutions to their hunger and nourishment needs. Modern families are busier than ever, juggling hectic schedules that send them to fast-food restaurant drive-through windows and to grocery stores crowded with pre-processed and ready-to-eat foods. With parents frequently working during the daytime, efficient food preparation in the evenings has become the number one priority in kitchens across the country. This trend began during the post–World War II years, which heralded the arrival of "fast foods" and innovative technological advancements that sought to simplify the cooking process. These products were marketed as quick and convenient alternatives that transformed the concept of cooking from a cultural activity and a means of bonding with one's family to a chore that should occupy as little time and energy as possible. Profiles from the Kitchen: What Great Cooks Have Taught Us about Ourselves and Our Food is Charles A. Baker-Clark's call to abandon the "homogenization of food and dining experiences" by encouraging us to reclaim knowledge of cooking and eating and reconnect with our ethnic, familial, and regional backgrounds. Baker-Clark profiles fifteen individuals who have shaped our experiences with food and who have gone beyond popular trends to promote cooking as a craft worth learning and sustaining. The cooks and food critics he writes about emphasize the appreciation of good cooking and the relationship of food to social justice, spirituality, and sustainability. Profiles from the Kitchen highlights prominent figures within the food industry, from nationally and internationally known individuals such as Paul and Julia Child, James Beard, and M.F.K. Fisher to regional food experts such as John T. Edge and Dennis Getto. The result is a collective portrait of foodlovers who celebrate the rich traditions and histories associated with food in our daily lives and who encourage us to reestablish our own connections in the kitchen.

Book Food and World Culture 2 volumes

Download or read book Food and World Culture 2 volumes written by Linda S. Watts and published by Bloomsbury Publishing USA. This book was released on 2022-08-23 with total page 878 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book uses food as a lens through which to explore important matters of society and culture. In exploring why and how people eat around the globe, the text focuses on issues of health, conflict, struggle, contest, inequality, and power. Whether because of its necessity, pleasure, or ubiquity, the world of food (and its lore) proves endlessly fascinating to most people. The story of food is a narrative filled with both human striving and human suffering. However, many of today's diners are only dimly aware of the human price exacted for that comforting distance from the lived-world realities of food justice struggles. With attention to food issues ranging from local farming practices to global supply chains, this book examines how food’s history and geography remain inextricably linked to sociopolitical experiences of trauma connected with globalization, such as colonization, conquest, enslavement, and oppression. The main text is structured alphabetically around a set of 70 ingredients, from almonds to yeast. Each ingredient's story is accompanied by recipes. Along with the food profiles, the encyclopedia features sidebars. These are short discussions of topics of interest related to food, including automats, diners, victory gardens, and food at world’s fairs. This project also brings a social justice perspective to its content—weighing debates concerning food access, equity, insecurity, and politics.

Book Wisconsin Agriculture

Download or read book Wisconsin Agriculture written by Jerry Apps and published by Wisconsin Historical Society. This book was released on 2015-08-17 with total page 335 pages. Available in PDF, EPUB and Kindle. Book excerpt: "I'm embarrassed to say I thought I knew anything substantial about Wisconsin agriculture or its history before I read this book. 'Wisconsin Agriculture' should be required reading in history classes from high school to the collegiate level. It makes me thankful that Jerry Apps has such a sense of commitment to Wisconsin's agricultural heritage--and to getting the story right." --Pam Jahnke, Farm Director, Wisconsin Farm Report Radio Wisconsin has been a farming state from its very beginnings. And though it's long been known as "the Dairy State," it produces much more than cows, milk, and cheese. In fact, Wisconsin is one of the most diverse agricultural states in the nation. The story of farming in Wisconsin is rich and diverse as well, and the threads of that story are related and intertwined. In this long-awaited volume, celebrated rural historian Jerry Apps examines everything from the fundamental influences of landscape and weather to complex matters of ethnic and pioneer settlement patterns, changing technology, agricultural research and education, and government regulations and policies. Along with expected topics, such as the cranberry industry and artisan cheesemaking, "Wisconsin Agriculture" delves into beef cattle and dairy goats, fur farming and Christmas trees, maple syrup and honey, and other specialty crops, including ginseng, hemp, cherries, sugar beets, mint, sphagnum moss, flax, and hops. Apps also explores new and rediscovered farming endeavors, from aquaculture to urban farming to beekeeping, and discusses recent political developments, such as the 2014 Farm Bill and its ramifications. And he looks to the future of farming, contemplating questions of ethical growing practices, food safety, sustainability, and the potential effects of climate change. Featuring first-person accounts from the settlement era to today, along with more than 200 captivating photographs, "Wisconsin Agriculture" breathes life into the facts and figures of 150 years of farming history and provides compelling insights into the state's agricultural past, present, and future.

Book Subsistence Strategies of the Oneota Tradition in Southwestern Wisconsin

Download or read book Subsistence Strategies of the Oneota Tradition in Southwestern Wisconsin written by Marianna Lynnea Clair and published by . This book was released on 2013 with total page 132 pages. Available in PDF, EPUB and Kindle. Book excerpt: In the La Crosse region, the Oneota people utilized a variety of wild animal and plant resources, as well as their own domesticated plants. Did this population suffer from nutrition related diseases or were there any nutritional gaps in their diet? The Oneota used a particular set of subsistence strategies when they chose highly nutritious foods to put in their diet, which created a stable way of life as the first farmers of Southwestern Wisconsin. This paper explores the overall health of the Oneota people in La Crosse and the different nutritional values of the native animal and plant resources found in this region. Two food profiles are established to demonstrate the balanced diets, by contemporary standards by the USDA, of both a mixed economy and primarily wild economy food plan for an Oneota individual who lived 400 years ago.
