Book excerpt: Vitamin C, or ascorbic acid, is mainly present in fruits and vegetables. The consumption of such foods is important since the human body does not have the ability to produce this essential micronutrient. Because it is water soluble, it can also easily be lost in cooking and long-term storage. Even though the role of vitamin C has been known since the early 1930s, only recently have researchers been actively studying and demonstrating its role and function in the treatment and prevention of many diseases. These studies will be the key to providing the scientific basis that explains why this simple but important vitamin possesses such a wide range of positive biological activities.

Book Vitamin C in Human Health and Disease

Download or read book Vitamin C in Human Health and Disease written by Wang Jae Lee and published by Springer. This book was released on 2019-08-06 with total page 184 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book presents the scientific evidence for the role of vitamin C in health and disease and offers new guidance on vitamin C intake in humans. The importance of vitamin C in preventing cancer and cardiovascular disease, its relevance to aging and stress, and its impacts on each of the human body systems are thoroughly assessed on the basis of the author’s extensive research and his deep understanding, as an anatomy professor, of the body as a whole. Findings published in the international scientific literature are fully taken into account, and due consideration is also given to empirical evidence, bearing in mind that mechanisms of action cannot always be precisely defined in the absence of human experiments. Beyond providing an up-to-date scientific perspective on the effects of vitamin C, the author hopes to promote human health worldwide by encouraging proper use of the vitamin. To this end, recommendations are made on the amount of vitamin C that should be taken daily and on the best way to take it. The book will be of interest to researchers, clinicians, and all others who wish to learn more about this vitamin and its significance.

Book Dietary Reference Intakes for Vitamin C Vitamin E Selenium and Carotenoids

Download or read book Dietary Reference Intakes for Vitamin C Vitamin E Selenium and Carotenoids written by Institute of Medicine and published by National Academies Press. This book was released on 2000-08-27 with total page 530 pages. Available in PDF, EPUB and Kindle. Book excerpt: This volume is the newest release in the authoritative series of quantitative estimates of nutrient intakes to be used for planning and assessing diets for healthy people. Dietary Reference Intakes (DRIs) is the newest framework for an expanded approach developed by U.S. and Canadian scientists. This book discusses in detail the role of vitamin C, vitamin E, selenium, and the carotenoids in human physiology and health. For each nutrient the committee presents what is known about how it functions in the human body, which factors may affect how it works, and how the nutrient may be related to chronic disease. Dietary Reference Intakes provides reference intakes, such as Recommended Dietary Allowances (RDAs), for use in planning nutritionally adequate diets for different groups based on age and gender, along with a new reference intake, the Tolerable Upper Intake Level (UL), designed to assist an individual in knowing how much is "too much" of a nutrient.

Download or read book Human Health and Physiology Essentials Vitamin C written by Mavis Keller and published by American Medical Publishers. This book was released on 2023-09-26 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: Vitamin C is a vital water-soluble vitamin, which is needed by a human body for a variety of metabolic functions. It is one of the most important nutrients required for treating common cold and cough. It is synthesized naturally in many animals but humans must consume vitamin C-rich meals to derive the vitamin-C. It is also utilized in repairing damaged tissues and for the production of crucial neurotransmitters. It plays a major role in appropriate functioning of the immune system. It is also utilized in the form of a cofactor for enzymes essential in the hydroxylation of lysine and proline to produce collagen. The lack of vitamin C can lead to decreased production of collagen that eventually results in the breakdown of body tissues, scaly skin, gingivitis, decreased wound healing, nosebleed, and decreased ability of the body to prevent infections. This book provides significant information to help develop a good understanding of vitamin C and its impact on human health. The topics included herein on vitamin C are of utmost significance and bound to provide incredible insights to readers. The extensive content of this book provides the readers with a thorough understanding of the subject.

Book Handbook of Vitamin C Research

Download or read book Handbook of Vitamin C Research written by Hubert Kucharski and published by Nova Science Publishers. This book was released on 2009 with total page 0 pages. Available in PDF, EPUB and Kindle. Book excerpt: The 6-carbon lactone known as ascorbic acid (vitamin C) is an important water-soluble vitamin. It is essential for preserving optimal health and it is used by the body for many purposes, including collagen biosynthesis, melanin reduction and enhanced immunity. This book addresses some important issues related to various methods which are employed to encapsulate asorbic acid. A comparation of the characteristics of ascorbic acid nano and microparticles prepared by different methods is also given. Furthermore, the biomedical significance of human vitamin C metabolism is examined, in the light of polymorphisms in xenobiotic enzymes deduced from genetic, biochemical and epidemiological results to estimate optimal nutrition. Additionally, Vitamin C exerts a protective role against some types of cancer. For that reason, this book investigates the protective effect of vitamin C. Possible pro- and antioxidant effects of vitamin C is also presented and their extrapolation on human health is discussed. Other chapters in this book include a review of the role of vitamin C in the physiology of several diseases, good dietary sources of vitamin C, a study of the effects of environmental tobacco smoke (ETS) on vitamin C status in exposed populations and the role of vitamin C in human reproduction and its effect on people who suffer from epileptic seizures.

Book excerpt: Vitamin C is one of the most important components to include in a regular diet. It is a powerful vitamin that provides a number of very important health benefits and affects multiple body processes. Vitamin C is not produced by our body, therefore, we need to ingest daily amounts of this nutrient for our body to function properly and to prevent disease. Vitamin C is a cofactor in at least eight enzymatic reactions, including several collagen synthesis reactions that, when dysfunctional, cause the most severe symptoms of scurvy. Vitamin C is also known to help prevent colds and flu, but it is much more than that; it is a potent antioxidant that fights free radicals in the body. As a result, it aids in preventing premature aging, strengthens bones and teeth, strengthens blood capillaries, fights infections, strengthens the immune system, helps to reduce the level of triglycerides and bad cholesterol in the blood, and it also helps our bodies absorb iron, preventing anemia. Furthermore, the antioxidants in vitamin C help ward off inflammation, infections, and viruses. Vitamin C also protects against heart attacks and strokes by helping to build proteins in various types of cellular constructions, which generally promotes improved vascular health and longevity. Studies suggest that vitamin C may even be important in preventing Alzheimer's disease or autoimmune problems, as well as atherosclerosis. This book aims to gather valuable information about this important vitamin, including sources of this nutrient with such important biological properties, the effects of processing and a number of different approaches to the roles of this powerful vitamin in the human body, as expressed by the diversity of themes addressed in the chapters.
