The Committee (now the Food and Nutrition Board) wanted to be able to estimate how much vitamin A the people of the United States were actually getting from the butter they were consuming. This publication brings together the results obtained up to and including August 1945, as reported by each of the cooperating States to the Technical Committee that was in charge of the study. The subject of accessory food-factors (vitamins) has a special significance, as it marks the entry of biochemical research into the problems of health and growth. Chemical formulae as yet play no part. The small quantity in which these factors occur in the food-stuffs makes the isolation of the chemically pure substances from the com plex chemical mixture, as it exists in nature, a very difficult problem. While the chemical nature of these substances is unknown, for the purposes of nutrition and health the investigator must carry on his work with the undetermined quantity which is present in a given food. It is known that some food-stuffs contain, and others do not contain, vitamins; and that faults in the diet are the cause of several diseases and of much ill-health. Three lectures on vitamins were given by Dr. R. H. A. Plimmer at the Marischal College, Aberdeen, in the summer of 1920. Further lectures were given to suit the needs of special audiences, and numerous requests were received for a written account suitable for the general reader. Alcohol (by weight) was added to 200 grams Of casein and the mixture stirred for one-half hour by means Of a mechanical stirrer and was then allowed to stand for five and one-half hours. After this period the casein was filtered Off through a Buchner funnel and washed once in the funnel with 500 cc. Of 60, per cent. Alcohol. The casein was again treated with one liter of 60 per cent. Alcohol as before but this time was left to stand for eighteen hours. It was filtered Off and washed as before with 500 cc. Of 60 per cent. Alcohol and finally with 500 cc. Of 90 per cent. Alcohol. The last washing merely facilitates the drying. The casein was removed from the filter and spread out in a thin layer and allowed to become air-dry. Throughout this paper the strength Of alcohol used is always given in per cent. By weight. The butter was melted at a temperature not exceeding 45 C. All the curd, salt and water settles to the bottom of the vessel and may be easily removed when the butter solidi fies. The butter fat is again melted at a low temperature, and filtered through filter paper using a hot water funnel.
