Original immigrants from Asia brought their foods, animals, and culinary skills with them, then for several thousand years, they were largely uninfluenced by outsiders. The tropical climate of much of the region, unique island geology and environmental factors also played a role in the evolution of islander cuisine, which is based on unique ingredients. The staples of breadfruit, yams, taro, coconut, sweet potato, and cassava are incorporated into a cuisine that uses cooking and preservation techniques unique to Polynesia, Micronesia, and Melanesia. Today, food culture in the Pacific is largely one of extremes. Although traditional foods and cookery survive and are highly valued, Westernization has meant that the overall diet of islanders has been negatively transformed and that islands are net importers of unhealthful foods. Ironically, the tourism industry has re-engaged islander people in food production and boosted their sense of identity. Students, food mavens, and travellers will find this to be a stellar introduction to the current culture of the Pacific Islands, with discussion of Hawaii, Australia, and New Zealand included. Chapter 1, Historical Overview, offers a fascinating chronicle of the evolution of a food culture of extremes, of isolation, climate, environment, and Western influences. Chapter 2, Major Foods and Ingredients, introduces a host of traditional tropical manna as well as imported products. The Cooking chapter discusses the truly unique cooking styles of the islands, such as steam-baking in the ground in an umu (oven). Chapter 6's Eating Out discussion shows the new acceptance of the individualist, recreational ritual of eating away from the community. Book excerpt: Kuk is a settlement at c. 1600 m altitude in the upper Wahgi Valley of the Western Highlands Province of Papua New Guinea, near Mount Hagen, the provincial capital. The site forms part of the highland spine that runs for more than 2500 km from the western head of the island of New Guinea to the end of its eastern tail. Until the early 1930s, when the region was first explored by European outsiders, it was thought to be a single, uninhabited mountain chain. Instead, it was found to be a complex area of valleys and basins inhabited by large populations of people and pigs, supported by the intensive cultivation of the tropical American sweet potato on the slopes above swampy valley bottoms. With the end of World War II, the area, with others, became a focus for the development of coffee and tea plantations, of which the establishment of Kuk Research Station was a result. Large-scale drainage of the swamps produced abundant evidence in the form of stone axes and preserved wooden digging sticks and spades for their past use in cultivation. Investigations in 1966 at a tea plantation in the upper Wahgi Valley by a small team from The Australian National University yielded a date of over 2000 years ago for a wooden stick collected from the bottom of a prehistoric ditch. The establishment of Kuk Research Station a few kilometres away shortly afterwards provided an ideal opportunity for a research project.

Book excerpt: Environments, landscapes, and ecological systems are often seen as fundamental by archaeologists, but how they relate to society is understood in very different ways. The chapters in this book take environment, culture, and technology together. All have been the focus of much attention; often one or other has been seen as the starting point for analysis, but this volume argues that it is the study of the inter-relationships between these three factors that offers a way forward. The contributions to this book pick up different strands within the tangled web of intersections between environment, technology, and society, providing a series of case studies which explore facets of this common theme in different settings and circumstances and from different perspectives. As well as addressing themes of theoretical and methodological interest, these case studies draw on primary research dealing with time periods from the late Pleistocene glacial maximum to the very recent past, and involve societies of very different types. Running through all the contributions, however, is a concern with the archaeological record and the ways in which scales of observation and availability of evidence affect the development of questions and explanations. The diversity of the chapters in this volume demonstrates the inherent weakness in any attempt to prioritise environment, technology, or society. These three factors are all embedded in any human activity, as change in one will result in change in the others: social and technical changes alter relations with the environment–and indeed the environment itself—and as environmental change drives changes in society and technology. As this book shows, it is possible to consider the relationship between the three factors from different perspectives, but any attempt to consider one or even two in isolation will mean that valuable insights will be missed.
