While there has been some increase in cattle numbers in the last decade, there has been a corresponding decline in sheep population. Relatively high export taxes and domestic price ceilings have reduced returns from livestock operations and discouraged expansion of the industry. Another factor is that most of the livestock are raised on unimproved native grass pastures, and as a result suffer from nutritional deficiencies. Thus productivity per head of livestock is low and costs of production tend to be high. During most of the past 10 years, Uruguay has had a higher per capita consumption of meat than any other country. About 85 percent of the meat production is consumed domestically, and only 15 percent sold on the export market. The government is now helping the veterinar industry to develop standards for foot-and-mouth disease vaccines. In the northern tick zom dipping is commonly practiced. One of Argentina's most hopeful government projects is the control of foot-and-mm disease. The disease is being combatted by quarantining infected areas and bringing these unc control by vaccination of all livestock within these areas. Argentina's cattle and beef industry is based on the productive pastures of the Pam Steers and heifers are put on special fattening pastures soon after weaning and kept there about 12 months until ready for market. Alfalfa pastures are the foundation of this syste although many animals are pastured on rye or other small grains during the winter. Fatten in feed lots, common in the United States, is not practiced. Except for purebred breeding anime Argentine cattle are not fed any grain except when occasionally turned into grain fields ti have failed to produce a crop worth harvesting. Book excerpt: This book examines the meat provision system of Rio de Janeiro from the 1850s to the 1930s. Until the 1920s, Rio was Brazil’s economic hub, main industrial city, and prime consumer market. Meat consumption was an indicator of living standards and a matter of public concern. The work unveils that in the second half of the nineteenth century, the city was well supplied with red meat. Initially, dwellers relied mostly on salted meat; then, in the latter decades of the 1800s, two sets of changes upgraded fresh meat deliveries. First, ranching expansion and transportation innovation in southeast and central-west Brazil guaranteed a continuous flow of cattle to Rio. Second, the municipal centralization of meat processing and distribution made its provision regular and predictable. By the early twentieth century, fresh meat replaced salted meat in the urban marketplace. This study examines these developments in light of national and global developments in the livestock and meat industries.
