Book excerpt: Ecosave is very pleased to introduce our recipe book using edible insects as an ingredient. Everyone knows that our daily life routines and actions are causing significant damage to the environment, and climate change is threatening our well-being. Fueled by climate shocks, conflicts, and COVID-19, the world faces a global food crisis. One of the best ways to solve these problems is with edible insects. Edible insects are an excellent alternative source of protein. A recent study showed that insects offer between 9.96 and 35.2 grams of protein per 100g, compared to meat providing between 16.8 and 20.6 grams. Also, insects require less care and upkeep than livestock. The production of edible insects uses considerably fewer resources (less land, less food, less water, less transport fuel, and less human labor) than animal livestock while producing a much smaller carbon footprint. Plants, on the other hand, do not produce greenhouse gases, but they require land and machinery use, water use, manufacturing processing, and transportation, all of which emit carbon. We must lower our carbon footprint and make a difference in climate change by understanding how food goes from the source to our mouths. By 2050, the Earth is expected to have nearly ten billion people, which means the demand for protein will exceed the production. Edible insects are an innovative way to solve this problem. In addition, insects serve as a part of a virtuous eco-cycle. Insects feeding on organic materials from other processes, such as spent grains from brewery operations can prevent additional waste from going into landfills. Reducing materials from going to landfills, which produce 20% of global methane emissions, can positively impact climate change. You may not be ready to try insects as your dinner, but these recipes will surely change your mind. The recipes are not only a great way to reduce our carbon footprint, but they taste fantastic, so try them.

Book Tuna Wars

    Book Details:
  • Author : Steven Adolf
  • Publisher : Springer Nature
  • Release : 2019-11-09
  • ISBN : 3030206416
  • Pages : 400 pages

Download or read book Tuna Wars written by Steven Adolf and published by Springer Nature. This book was released on 2019-11-09 with total page 400 pages. Available in PDF, EPUB and Kindle. Book excerpt: Historically, whenever tuna was hauled ashore, the sounds of battle were never far away. ‘Tuna Wars’ tells the untold story of the power struggles emerging around tuna, from the distant past to your present-day dinner table. In the ancient past, the giant tuna was the first fish to become the basis of a large-scale industry and a ‘global’ trade that created fortunes: Hannibal was able to finance his elephant campaign on Rome thanks to tuna. From the Middle Ages on, a tuna fishing monopoly on Spain’s southern coast allowed the nobility to completely dominate the area and even lead the ‘invincible’ Armada. When the markets for tuna increased exponentially thanks to technical advances, tuna eventually became a billion-dollar business and one of the most-consumed fish species worldwide. But this massive expansion came at a price. An 18th century monk in Madrid was the first to warn that tuna fisheries needed to be run sustainably for the sake of future generations. And the issue of sustainability would go on to become a game-changer in the modern tuna wars, characterized by new alliances and partnerships, hybrid warfare and commercial power struggles. In addition to accompanying you through the history of tuna and sharing insights into fisheries science and approaches to sustainably managing fisheries, Tuna Wars offers practical guidance on choosing sustainably fished tuna. In short, it will tell you everything you ever wanted to know about tuna, but were afraid to ask.

Book The Seafood Industry

Download or read book The Seafood Industry written by George J. Flick and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 460 pages. Available in PDF, EPUB and Kindle. Book excerpt: Although there are excellent books on specific aspects of the seafood industry, few, if any, offer both the breadth and depth of information that the editors and authors of The Seafood Industry provide here. The Seafood Industry is designed to cover the spectrum of seafood topics, taking the products from the water to the dinner plate and every stop in between. Information and insights into commercially important species of finfish and shell and their handling and processing are furnished. Chapters are included on fish such wide-ranging topics as retail merchandising of seafood, plant cleaning and sanitation, transportation, and product packaging. Emerging issues and interests, such as aquaculture, waste treatment, and government regulations, also are covered. The information is written so that the processor, wholesale buyer, retailer, or consumer can understand it and put it to practical application. Yet the student and the scientist can find much valuable information within the various chapters. The material included here has proven its practicality, as it is adapted from a self-study course that has been used by hundreds of people in roughly forty states and fifteen foreign countries. The editors and authors have made every effort to furnish the most up-to-date information and technologies available. However, as with any dynamic industry, change is constant. Fishery stocks ebb and flow; consumption patterns shift; new technologies are devised and implemented; and government rules and regulations are rewritten and enacted.
