Book excerpt: Suite à la crise de l’encéphalopathie spongiforme bovine (ESB) dans les années 1990, la voie de valorisation des farines animales dans l’alimentation des animaux a été restreinte puis interdite, en France et en Europe. Le fort pouvoir calorifique des farines animales donne à l’incinération une voie de valorisation intéressante en terme de récupération d’énergie et assure la destruction de toutes les protéines dont le prion. Les cendres issues de cette incinération sont principalement composées de phosphates de calcium (hydroxyapatite et whitlockite), connus pour immobiliser les métaux lourds dans l’eau et dans le sol. L’objectif de la thèse est d’étudier deux voies de valorisation pour les cendres de farines animales et de mettre en place une évaluation des impacts environnementaux par l’utilisation complémentaire de tests de lixiviation et d’écotoxicité. La démarche de cette étude consiste dans un premier temps à une caractérisation physico-chimique et environnementale de cendres de farines animales d’origines différentes. Dans un deuxième temps, deux stratégies de valorisation sont explorées : 1) la valorisation des cendres de farines animales, comme sous-produit, dans les matériaux cimentaires, donnant lieu à une étude des impacts technologiques et environnementaux des cendres sur les propriétés de la matrice. 2) la valorisation des cendres de farines animales comme matériau pour immobiliser le plomb et le cadmium (sous forme non biodisponible pour les organismes vivants), avec une application de ce piégeage dans les matériaux cimentaires. La caractérisation des cendres de farines animales montre qu’elles sont principalement composées d’hydroxyapatite et de whitlockite. La valorisation de mâchefers d’incinération de farines animales dans la matrice cimentaire en substitution du sable est envisageable en prenant en considération la forte teneur en eau de ces sous-produits. Finalement, les cendres de farines animales présentent des capacités de piégeage en plomb et cadmium en milieu aqueux intéressantes dont la valeur dépend des compositions physico-chimiques de la cendre et de l’environnement
