A shared view of the goals and framework for doing design research was missing. Design is a multidisciplinary activity occurring in multiple application areas and involving multiple stakeholders. As a consequence, design research emerges in a variety of disciplines for a variety of applications with a variety of subjects. This makes it particularly difficult to review its literature, relate various pieces of work, find common ground, and validate and share results that are so essential for sustained progress in a research community. Above all, design research needs to be successful not only in an academic sense, but also in a practical sense. How could we help the community develop knowledge that is both academically and practically worthwhile? Each of us had our individual ideas of how this situation could be improved. Lucienne Blessing, while finishing her thesis that involved studying and improving the design process, developed valuable insights about the importance and relationship of empirical studies in developing and evaluating these improvements. Amaresh Chakrabarti, while finishing his thesis on developing and evaluating computational tools for improving products, had developed valuable insights about integrating and improving the processes of building and evaluating tools.

Book excerpt: Both butadiene and styrene are produced in high volumes; their combined annual production is 20 million tons. They occur together in many industrial and commercial products, including latexes, polymers, adhesives, and particularly in styrene-butadiene rubber tires. Styrene was classified in 1987 within IARC criteria as 2B (possibly carcinogenic to humans); 1,3-butadiene was placed in class 2A (probably carcinogenic to humans) at the meeting of a working group convened by IARC in 1991. This volume brings together the latest information about the toxic hazards of the two compounds. The focus of research on styrene seems to be its neurotoxicological effects and its potential carcinogenicity. Interest in 1,3-butadiene is much more recent and appears to be directed primarily towards species-specific differences in its carcinogenicity. Papers included in this volume were selected so that current data obtained by ambient and biological monitoring and on genetic toxicity and carcinogenicity are amply covered for both compounds. Seven main areas of research are covered: exposures to butadiene and styrene; estimation of internal doses received by exposed people; measurements of metabolites and of adducts with DNA and protein as markers of exposure; neurotoxicity and reproductive effects; genetic toxicity; carcinogenicity; and implications for public health. New results from epidemiological studies of subjects occupationally exposed to butadiene and to styrene are reported. Special consideration is given to the need for developing and validating biological markers of exposure to butadiene and to styrene in order to measure biological effects and susceptibility in human populations, so that adverse effects can be detected earlier and action taken to reduce public health risks. Information on the mechanisms of carcinogenic action is reviewed, since differences between species with respect to such mechanisms can have a major bearing on the extrapolation to human of findings of carcinogenicity in animals. These topics, representing the 'state of the art' with respect to scientific knowledge about the toxic manifestations and mechanisms of 1,3-butadiene and styrene are all covered in this volume.

The headquarters of the meeting was the Radisson Kauai Beach Resort. This international meeting was attending by approximately 80 individuals from 23 nations and 4 continents. Seventy-five papers were presented either as platform presentations or poster presentations. Taurine, first isolated from ox bile in 1827 by Tiedemann and Gmelin and named in 1838 by Demarcay, became of significant scientific interest in 1968 when the first extensive review article was published by Jacobsen and Smith. Interest in taurine grew exponentially after 1975 when the first taurine symposium was organized by Ryan Huxtable in Tucson, Arizona. Since that date, taurine symposia have been held approximately every two years held in various cities and resort areas around the world. Taurine investigators have had the privilege of attending these scientific meetings on three continents - Asia, Europe, and North America. Since the initial meeting in 1975, a central question addressed during many of the symposia has been: "What is physiological, pharmacological, nutritional, and pathological role of taurine?". Although taurine has been established as an important osmolyte, it appears to affect many other biological processes. However, the exact mechanism(s) by "which taurine acts" has not yet been definitively answered. In Kauai, the patticipants discussed many topics and asked many questions regarding the role and actions of taurine.

Whether we accept or reject a food depends primarily on its flavour. Both desirable and undesirable flavour effects are contemplated. Furthermore, threshold values of different flavour-active compounds have an important effect on the cumulative sensory properties of all foods. Meat from different species constitutes a major source of protein for most people. Although raw meat has little flavour and only a blood-like taste, it is a rich reservoir of non-volatile compounds with taste-tactile properties as well as flavour enhancers and aroma precursors. Non-vola tile water-soluble precursors and lipids influence the flavour of meat from different species. In addition, mode of heat processing and the nature of additives used may have a profound effect on the flavour of prepared meats. This book reports the latest advancements in meat flavour research. Following a brief overview, chapters 2 to 5 discuss flavours from different species of meat, namely beef, pork, poultry and mutton. In chapters 6 to 12 the role of meat constituents and processing on flavour are described. The final section of the book (chapters 13 to 15) summarizes analytical methodologies for assessing the flavour quality of meats. This book includes 19 research works showing important and interesting advances, as well as new approaches, in this research topic. Four articles are dedicated to studying the effect of canning conditions (filling media and some ingredients) on the diverse parameters of quality for fish and pet foods. Three articles are devoted to studying the effects of dehydration (pre-treatments and drying procedures). One article is dedicated to monitoring the elaboration of a fermented and dehydrated product (sausage) using a portable NIRS device. The ninth article of this book studies the effect of low-dose electron beam irradiation on cooking quality, moisture migration, and thermodynamics, as well as the digestion properties of the isolated starches in newly harvested and dried rice. The next contribution studies the use of different preservatives to avoid the formation of undesirable volatile organic compounds in stracciatella cheese. Another article examines the impact of source material, kibble size, temperature, and duration on the efficiency of the aqueous extraction of sugars and phenolics from carob kibbles by conventional heat-assisted (HAE) and ultrasound-assisted (UAE) methods. In two articles, marinating with different extracts, alone or combined with other seasoning/conditioning methods, was essayed to tenderize beef or to improve the sensory quality of chicken leg and breast meat. The effect of various cooking methods on the quality, structure, pasting, water distribution and protein oxidation of fish and meat-based snacks is studied in the fourteenth article. The last five articles are dedicated to the study of the effects of storage on several foods (olive oil, blueberry, beetroot and Atlantic mackerel).
