Book excerpt: FAO provides countries with technical support to conduct nutrition assessments, in particular to build the evidence base required for countries to achieve commitments made at the Second International Conference on Nutrition (ICN2) and under the 2016-2025 UN Decade of Action on Nutrition. Such concrete evidence can only derive from precise and valid measures of what people eat and drink. There is a wide range of dietary assessment methods available to measure food and nutrient intakes (expressed as energy insufficiency, diet quality and food patterns etc.) in diet and nutrition surveys, in impact surveys, and in monitoring and evaluation. Differenct indicators can be selected according to a study's objectives, sample population, costs and required precision. In low capacity settings, a number of other issues should be considered (e.g. availability of food composition tables, cultural and community specific issues, such as intra-household distribution of foods and eating from shared plates, etc.). This manual aims to signpost for the users the best way to measure food and nutrient intakes and to enhance their understanding of the key features, strengths and limitations of various methods. It also highlights a number of common methodological considerations involved in the selection process. Target audience comprises of individuals (policy-makers, programme managers, educators, health professionals including dietitians and nutritionists, field workers and researchers) involved in national surveys, programme planning and monitoring and evaluation in low capacity settings, as well as those in charge of knowledge brokering for policy-making.

Book excerpt: The purposes of this research project were to assess nutrition knowledge and dietary behavior of adolescents, and to determine what relationship, if any, exists between nutrition knowledge and dietary behavior. A newly-developed 25-question nutrition knowledge survey was used to measure general nutrition knowledge among 287 seventh grade students in Newburgh, Indiana. Dietary behavior scores were determined by rating the food choices purchased by the students in the school cafeteria over one week, with points awarded if the items met IN-S.B. 0111 s definition of a "better choice" food. Results indicated low levels of nutrition knowledge (mean=48.5%), with girls scoring significantly higher on the nutrition knowledge survey than boys. The average dietary behavior score was 73.8% (an average of 7.8 "better choice" foods out of every 11.4 total foods purchased). No significant relationship was found between the score on the nutrition knowledge test and the dietary behavior score. Linear regression analysis indicated nutrition knowledge was a more important predictor of dietary behavior than gender or race in this seventh grade population.

Self-constructed questionnaire validated and considered appropriate by the researcher’s supervisor was used for data collection with the help of train research assistance, the researcher went ahead the schools to administer the instrument and collected them back. The retrieved questionnaire forms were screened. The data collected was analysed by frequency counts and simple percentage for bio-data and chi-square analysis were used for the variables (research question under the study). The study reveals that Students who have access to require balance diet perform better than those who did not have, Nourished students perform better than mal-nourished students, Socio economic status has significant influence on nutritional intake, Students who free from nutritional disorder perform better than students with nutritional disorder and Food availability has significant influence on academic performance.

Book excerpt: Abstract: Although significant differences in eating habits were observed, no association between nutrition knowledge and dietary adequacy was demonstrated in a survey of 1930 male and female college students, which included 717 members of the national home economics honor society. Food intake data was collected by 24-hour food recall and nutrition knowledge was evaluated with a 25 item nutrition quiz. Significant differences in nutrition knowledge among honor society students, non-home economics females and non-home economics males were indicated by mean test scores of 18.2, 13.5 and 12.8 in the 3 groups respectively. However, non-home economics males scored significantly higher with respect to dietary adequacy than either of the other 2 groups. No significant relationship between adequacy of diet and knowledge of nutrition was seen for any of the 3 groups. These findings suggest that traditional nutrition education methods may not be effective in changing eating behaviors.

Book excerpt: The purpose of this study was to compare the difference and relationship between nutrition knowledge and food intake among students who had completed a nutrition course and students who had not completed a nutrition course. It was hypothesized that there would be a relationship between the knowledge scores and the Healthy Eating Index (HEI) scores. Also, it was expected that there would be a difference in the nutrition knowledge scores and healthy eating index scores among students who had completed a nutrition course and students who had not completed a nutrition course. The HEI-2010 was used to measure diet quality. The participants (n=121) completed an electronic questionnaire that consisted of 74 nutrition knowledge questions and a 24-hr diet recall form. There was a positive correlation between knowledge scores and HEI scores (P = 0.001). Students who had completed a nutrition course had a mean knowledge score of 49.5 and a mean HEI score of 68.3, while students who had not completed a nutrition course had a mean knowledge score of 39.2 and a mean HEI score of 55.4. This study demonstrated that nutritional knowledge contributes to better food choices and more adequate nutritional intake among college students. Future nutrition interventions to improve dietary quality in college students should focus on improving nutrition knowledge.

The dietary habits of this population are concerning as few meet current dietary recommendations for consuming fruits and vegetables. Equally troubling among this group is the consumption of sugar-sweetened beverages and the lack of physical activity. Studies that investigate the link between nutrition knowledge, attitudes, and behaviors have shown mixed results and new methods to investigate this relationship are needed. Food literacy is a new term that has risen out of the health and nutrition literacy fields. Food literacy seeks to examine the complex relationship between knowledge, attitudes, and behaviors from the perspective of food and not individual nutrients. Adolescence is a unique life stage when there is development of decision-making skills. Food literacy programs are ideally suited to this stage because the concept focuses on building capacity to operationalize healthy decisions regarding food. New methods are also needed, to help increase engagement and participation in food-related programs. Adolescents are digital natives. Eighty-seven percent have access to a computer, 88% have access to a cellphone, and 92% go online daily, from these devices. Driving the use of cellphones is social media and text messaging. In fact, 91% of adolescents use their cellphone for texting, sending an average of 67 messages/day. Adolescent's pervasive use of technology, in particular cellphones, provides an opportunity to investigate the potential of this medium to engage participants in education about food. Another novel method to engage adolescents in food-related education is the use of community-based participatory research (CBPR). CBPR is a collaborative approach that includes community members in the research process. The approach incorporates sharing of ideas between community members and researchers, values mutual decision-making, and empowers participants to plan activities and make changes they see as beneficial to their community. CBPR is not often used with adolescents, and no current research has used CBPR to inform a technology-driven, food literacy program for low-income, ethnically diverse adolescents. Filling this gap will add to the understanding of the use of innovative programs and ideas to engage adolescents and help them develop healthy eating behaviors.
