Book excerpt: Abstract: Purpose: The objective of this study was to compare the behavior of healthy preschool children who had no dental caries with preschool children who had extensive dental cavities requiring treatment under general anesthesia. Methods: A convenience sample of 120 healthy (ASA I) children between the ages of 30 and 60 months was enrolled in this prospective, descriptive study. Thirty subjects were assigned to each of the following cohorts based on location and caries status: Group I (private practice/caries-free), Group 2 (private practice/caries-active), Group 3 (Columbus Children's Hospital/caries-free), Group 4 (Columbus Children's Hospital/caries-active). Each child's primary caregiver completed the 100-question Child Behavior Checklist (CBCL), which documented the child's everyday behavior. Results: No significant differences in behavior were found in any measure based on location. However, several differences in behavior based on presence or absence of active caries were noted. Children with active caries were significantly more anxious and depressed than the caries-free children. Caries-active children also had significantly more sleep problems than the children without caries. In addition, children with active caries had significantly more aggressive behavior, externalizing problems, attention deficit/hyperactivity problems and total overall behavior problems. Conclusions: Behavior of children treated in a private practice setting is not significantly different compared to children treated at low-income dental clinic. Children with active caries have more behavior problems than children without caries, including, sleep problems, anxiety/depression, aggressive behavior, and attention deficit/hyperactivity problems.

Food reformulation by definition is the act of re-designing an existing, often popular, processed food product with the primary objective of making it healthier. In recent years the concept of food reformulation has evolved significantly as additional benefits of re-designing food have become apparent. In addition to targeting specific food ingredients that are considered potentially harmful for human health, food reformulation can also be effectively used as a strategy to make foods more nutritious by introducing essential macro- /micro-nutrients or phytochemicals in the diet. Reformulating foods can also improve sustainability by introducing “waste” (and underutilized) ingredients into the food chain. In light of these developments, reformulating existing foods is now considered a realistic and attractive opportunity to provide healthy, nutritious, and sustainable food choices to the consumers and likewise improve public health. Indeed reformulation has now become essential in many cases for redressing the health properties of foods that are popularly consumed and significantly affecting public health. This edited volume covers aspects of food reformulation from various angles, exploring the role of the food industry, academia, and consumers in developing new products.
