Several essays new to the second edition are included. Kosher Food Production, Second Edition serves as an indispensable outline of the issues confronting the application of Kosher law to issues of modern food technology.

  • ISBN : 0231540930
  • Pages : 436 pages

Download or read book Kosher USA written by Roger Horowitz and published by Columbia University Press. This book was released on 2016-04-12 with total page 436 pages. Available in PDF, EPUB and Kindle. Book excerpt: Kosher USA follows the fascinating journey of kosher food through the modern industrial food system. It recounts how iconic products such as Coca-Cola and Jell-O tried to become kosher; the contentious debates among rabbis over the incorporation of modern science into Jewish law; how Manischewitz wine became the first kosher product to win over non-Jewish consumers (principally African Americans); the techniques used by Orthodox rabbinical organizations to embed kosher requirements into food manufacturing; and the difficulties encountered by kosher meat and other kosher foods that fell outside the American culinary consensus. Kosher USA is filled with big personalities, rare archival finds, and surprising influences: the Atlanta rabbi Tobias Geffen, who made Coke kosher; the lay chemist and kosher-certification pioneer Abraham Goldstein; the kosher-meat magnate Harry Kassel; and the animal-rights advocate Temple Grandin, a strong supporter of shechita, or Jewish slaughtering practice. By exploring the complex encounter between ancient religious principles and modern industrial methods, Kosher USA adds a significant chapter to the story of Judaism's interaction with non-Jewish cultures and the history of modern Jewish American life as well as American foodways.

Book Kosher

  • Author : Timothy D. Lytton
  • Publisher : Harvard University Press

Download or read book Kosher written by Timothy D. Lytton and published by Harvard University Press. This book was released on 2013-04-01 with total page 205 pages. Available in PDF, EPUB and Kindle. Book excerpt: Generating over $12 billion in annual sales, kosher food is big business. It is also an unheralded story of successful private-sector regulation in an era of growing public concern over the government’s ability to ensure food safety. Kosher uncovers how independent certification agencies rescued American kosher supervision from fraud and corruption and turned it into a model of nongovernmental administration. Currently, a network of over three hundred private certifiers ensures the kosher status of food for over twelve million Americans, of whom only eight percent are religious Jews. But the system was not always so reliable. At the turn of the twentieth century, kosher meat production in the United States was notorious for scandals involving price-fixing, racketeering, and even murder. Reform finally came with the rise of independent kosher certification agencies which established uniform industry standards, rigorous professional training, and institutional checks and balances to prevent mistakes and misconduct. In overcoming many of the problems of insufficient resources and weak enforcement that hamper the government, private kosher certification holds important lessons for improving food regulation, Timothy Lytton argues. He views the popularity of kosher food as a response to a more general cultural anxiety about industrialization of the food supply. Like organic and locavore enthusiasts, a growing number of consumers see in rabbinic supervision a way to personalize today’s vastly complex, globalized system of food production.

The Guide gives you much detailed information which will help you make your own choice upon whom to rely, or you may consult a rabbi or kosher certifying agency for further guidance. We welcome information or queries about kosher symbols and kosher agencies not included in the current Guide. An Addendum to the current Guide will be published in October of 2019. The next full Kosher Supervision Guide will be published in October of 2020.

Book Jewish Eating and Identity Through the Ages

Download or read book Jewish Eating and Identity Through the Ages written by David C. Kraemer and published by Routledge. This book was released on 2020-07-24 with total page 218 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book explores the history of Jewish eating and Jewish identity, from the Bible to the present. The lessons of this book rest squarely on the much-quoted insight: 'you are what you eat.' But this book goes beyond that simple truism to recognise that you are not only what you eat, but also how, when, where and with whom you eat. This book begins at the beginning – with the Torah – and then follows the history of Jewish eating until the modern age and even into our own day. Along the way, it travels from Jewish homes in the Holy Land and Babylonia (Iraq) to France and Spain and Italy, then to Germany and Poland and finally to the United States of America. It looks at significant developments in Jewish eating in all ages: in the ancient Near East and Persia, in the Classical age, throughout the Middle Ages and into Modernity. It pays careful attention to Jewish eating laws (halakha) in each time and place, but it does not stop there: it also looks for Jews who bend and break the law, who eat like Romans or Christians regardless of the law and who develop their own hybrid customs according to their own 'laws', whatever Jewish tradition might tell them. In this colourful history of Jewish eating, we get more than a taste of how expressive and crucial eating choices have always been.

Book Kosher Nation

  • Author : Sue Fishkoff
  • Publisher : Schocken
  • Release : 2010-10-12
  • ISBN : 0805242651
  • Pages : 385 pages

Download or read book Kosher Nation written by Sue Fishkoff and published by Schocken. This book was released on 2010-10-12 with total page 385 pages. Available in PDF, EPUB and Kindle. Book excerpt: Kosher? That means the rabbi blessed it, right? Not exactly. In this captivating account of a Bible-based practice that has grown into a multibillions-dollar industry, journalist Sue Fishkoff travels throughout America and to Shanghai, China, to find out who eats kosher food, who produces it, who is responsible for its certification, and how this fascinating world continues to evolve. She explains why 86 percent of the 11.2 million Americans who regularly buy kosher food are not observant Jews—they are Muslims, Seventh-day Adventists, vegetarians, people with food allergies, and consumers who pay top dollar for food they believe “answers to a higher authority.” Fishkoff interviews food manufacturers, rabbinic supervisors, and ritual slaughterers; meets with eco-kosher adherents who go beyond traditional requirements to produce organic chicken and pasture-raised beef; sips boutique kosher wine in Napa Valley; talks to shoppers at an upscale kosher supermarket in Brooklyn; and marches with unemployed workers at the nation’s largest kosher meatpacking plant. She talks to Reform Jews who are rediscovering the spiritual benefits of kashrut, and to Conservative and Orthodox Jews who are demanding that kosher food production adhere to ethical and environmental values. And she chronicles the corruption, price-fixing, and strong arm tactics of early-twentieth-century kosher meat production, against which contemporary kashrut standards pale by comparison. A revelatory look at the current state of kosher in America, this book will appeal to anyone interested in food, religion, Jewish identity, or big business.

Book Rabbis Reporters and the Public in the Digital Holyland

Download or read book Rabbis Reporters and the Public in the Digital Holyland written by Yoel Cohen and published by Routledge. This book was released on 2023-12-21 with total page 322 pages. Available in PDF, EPUB and Kindle. Book excerpt: Focused on the triangular relationship between rabbis, journalists and the public, this book analyses each group’s role in influencing the agenda around religion in Israel. The book draws upon the author's original research, comprising an analysis of the coverage of religion on four Israeli news websites, a series of surveys of rabbis, journalists, and the public, as well as a large number of interviews conducted with a range of stakeholders: community rabbis, teacher rabbis, and religious court judges; reporters, editors, and spokespersons; and the Israeli Jewish public. Key questions include: What are rabbis’ philosophical views of the media? How does the media define news about Judaism? What aspect of news about religion and spirituality interest the public? How do spokespersons and rabbis influence the news agenda? How is the triangular relationship between rabbis, journalists and the public being altered by the digital age? Despite a lack of understanding about mass media behaviour among many rabbis, and, concurrently, a lack of knowledge about religion among many journalists, it is argued that there is shared interest between the two groups, both in support of mass-media values like the right to know and freedom of expression. It is further argued that the public's attitude to news about religion is significant in determining what journalists should publish. The book will be of interest to those studying mass communications, the media, Judaism and Israeli society, as well as researchers of media and religion.

Book The Routledge Handbook of Vegan Studies

Download or read book The Routledge Handbook of Vegan Studies written by Laura Wright and published by Routledge. This book was released on 2021-03-30 with total page 444 pages. Available in PDF, EPUB and Kindle. Book excerpt: This wide-ranging volume explores the tension between the dietary practice of veganism and the manifestation, construction, and representation of a vegan identity in today’s society. Emerging in the early 21st century, vegan studies is distinct from more familiar conceptions of "animal studies," an umbrella term for a three-pronged field that gained prominence in the late 1990s and early 2000s, consisting of critical animal studies, human animal studies, and posthumanism. While veganism is a consideration of these modes of inquiry, it is a decidedly different entity, an ethical delineator that for many scholars marks a complicated boundary between theoretical pursuit and lived experience. The Routledge Handbook of Vegan Studies is the must-have reference for the important topics, problems, and key debates in the subject area and is the first of its kind. Comprising over 30 chapters by a team of international contributors, this handbook is divided into five parts: History of vegan studies Vegan studies in the disciplines Theoretical intersections Contemporary media entanglements Veganism around the world These sections contextualize veganism beyond its status as a dietary choice, situating veganism within broader social, ethical, legal, theoretical, and artistic discourses. This book will be essential reading for students and researchers of vegan studies, animal studies, and environmental ethics.
