One answer which suggests itself is, that it is only of late years that any considerable time or attention has been given by the Agricultural Experiment Sta tions to nutrition investigations of fowls, far less than is warranted by the importance of the industry; while studies on the nutrition of the cow, for instance, have been carried on for many years. The dairy man has thus, through the dissemination of the results of work at the different stations, been educated and knows just what to give his ani mals so as to bring about the best results. When the poultrymen shall have been likewise instructed, the sale of proprietary or condimental foods will be very small. So many requests for the composition and food-value of the differ ent proprietary foods have been received that the Station has under taken a systematic examination of these materials, and presents herewith a preliminary report of work along this line. The investigation is still in progress, and it is planned to continue the analyses until all such foods shall have been examined. As this bulletin is intended mainly for distribution in this State, it contains, in addition to the matter just mentioned, considerable data which, while not being original or new, are necessarily reprinted from previous bulletins to meet the demand for information concerning the nutritive and economic value of the more commonly used foods. It would be incorrect to say that it is'an ideal food, because different varieties and grades vary in color, plumpness and hardness. The hard and dark colored wheats are supposed to be richest in protein, and therefore most valuable as food for poultry. Whole wheat has long been considered an essential in high grade scratch feeds. Poultry does not appear to tire of it, and the results from its use are always most satisfactory. Middling's is a by-product of wheat and is usually a coarse flour and fine bran. It may vary in proportions in different lots or in different mills. In some sections shorts is another term given to this product. Having -a great deal of food value, this product finds a most useful place in many dry mash es. The proportion must be determined by the actual contents. Being rather finely ground, it mixes well with the other ingredients. Bran is the outside covering of the wheat and is rather coarse. It is _much lower in feeding value than middlings but it has a decided effect upon the digestive organs and prove most use ful in promoting proper elimination. Many home mixed mashes can be great ly improved by the addition of bran. It adds bulk, an essential requirement of any first class mash. In some cases where a moist mash is used, the use of red dog flour will greatly help the consistency of the mash. This is merely a flour which is not suitable for bread making. And the discovery is this: In the foods we eat or should eat there are present very small amounts of certain life-giving and disease-preventing bodies, the consumption of which is essential to growth and good health. Such bodies are called vitamins. Before the day when the import of vitamins came to be recognized we were well satisfied to believe that an adequate supply of protein, fat, carbohydrate, mineral salts and water met our food requirements fully. Food charts were widely disseminated which made it apparent that the heat units of food, the "calories" available, were the essential factors in the control of a diet or ration. Women's clubs and other organizations were addressed on this score so often and emphatically that many a conscientious housewife kept scales in the kitchen to weigh protein, fat and carbohydrates and thereby compute the daily distribution and consumption of calories. The common belief of past years, when the calorie or energy value of a diet was the theme, has since been modified. Fuel values are as important of consideration at the present time as they were in earlier years, but it is now well established that in addition to the body-building and fuel components of foodstuffs, namely, the protein, fat and carbohydrates and also salts and water, we should consume the accessory food substances or factors known as vitamins. That substances playing so vital a role in nutrition should until a decade ago have escaped discovery is surprising, so much so, in fact, that much incredulity was provoked over the announcement. The brilliant but necessarily laborious researches of investigators in this country supported by original as well as confirmatory work in England and elsewhere have largely overcome this scepticism, much of which apparently emanated from Germany, and have served to make the decade a monumental one in the dietary field. These revelations have made the question of what to eat an even more necessary matter of "food for thought." With foodstuffs constantly increasing in cost many are disposed to replace one food by another cheaper one on a calorie basis. This cannot be done with impunity. All of these recipes have been carefully tested by many years practical use and are entirely reliable and depend able. No reference is made to the chemical composition of food stuffs and these balanced-ration mixtures are based on practical merit, not chemical composition. Anyone desiring to figure out the precise chemical contents of foodstuffs named will find complete analyses of all the common stock feeding materials in Farmer's Bulletin, No. 22, entitled The Feeding of Farm Ani mals, published by U. S. Department of Agriculture. This bulletin can be obtained free on application to the Secretary of Agriculture. In selecting a food ration the poultryman should be gov erned by the practical results obtained. Chemical analyses of food merely show the amount of water, fibre, protein, ash, fat, and non-nitrogenous matter the chemist is able to find therein. They do not indicate in any way the digestibility of the food. Some foodstuffs may be particularly rich in protein and at the same time that protein may be of little actual, practical value to the fowl because of difficulty in properly digesting it. Some foods rich in protein, notably beans and peas, also contain irri tating or toxic elements that are actually injurious if such foods are fed continuously in considerable quantities. Heavy feeding of vegetable foods rich in protein is always much more likely to cause trouble and serious digestive disturbance than heavy feed ing of animal protein foods like pure beef scrap, fresh meat, cut green bone, etc. In mixing grain foods, the formulae for which are given in this chapter, the Whole quantity of grain to be mixed should be dumped upon a smooth clean board floor. Here it should be mixed by turning over with scoop shovels until thoroughly blended. It can then be sacked or placed in bins.
