Book The Effect of the Expanded Food and Nutrition Education Program on Participants Diet Quality

Download or read book The Effect of the Expanded Food and Nutrition Education Program on Participants Diet Quality written by Rachel A. Spencer and published by . This book was released on 2016 with total page 136 pages. Available in PDF, EPUB and Kindle. Book excerpt: This project assesses the effectiveness of the Expanded Food and Nutrition Education Program (EFNEP) within the context of supermarket access. EFNEP is a national community nutrition education program that strives to give participants the tools to live healthier lives. Analysis was performed on participants from 16 Arkansas counties that completed EFNEP during 2013 or 2014. The program outcome is measured in terms of the change in Healthy Eating Index (HEI) as calculated from 24-hour diet recalls at program entry and exit. Supermarket locations were obtained from the USDA Food Nutrition Service's SNAP Retail Locator and represent the food environment near the midpoint of our two-year study period. Each participant's census block of residence was characterized as being supermarket accessible or non-accessible based on the availability of supermarkets within one mile (ten miles) of the center of urban (rural) census blocks. Linear regressions are used to model changes in HEI scores as a function of program graduation, defined as completing eight or more EFNEP lessons. Our models are estimated with educator fixed effects and include controls for nutrition assistance, age, gender, educational attainment, race, and ethnicity. The key finding is that the effect of graduation on HEI was higher for participants with access to supermarkets. This finding holds across urban and minority subsamples and is robust to measurement of program exposure as graduation or in terms of lessons completed. The implication is that limited access to affordable and healthy foods is a crucial barrier that may impact goals of EFNEP and other educational interventions. Moreover, understanding the role of the food environment enables educators to tailor curriculum to the constraints facing lower-income audiences.

Book excerpt: Globally, the food system and the relationship of the individual to that system, continues to change and grow in complexity. Eating is an everyday event that is part of everyone’s lives. There are many commentaries on the nature of these changes to what, where and how we eat and their socio-cultural, environmental, educational, economic and health consequences. Among this discussion, the term "food literacy" has emerged to acknowledge the broad role food and eating play in our lives and the empowerment that comes from meeting food needs well. In this book, contributors from Australia, China, United Kingdom and North America provide a review of international research on food literacy and how this can be applied in schools, health care settings and public education and communication at the individual, group and population level. These varying perspectives will give the reader an introduction to this emerging concept. The book gathers current insights and provides a platform for discussion to further understanding and application in this field. It stimulates the reader to conceptualise what food literacy means to their practice and to critically review its potential contribution to a range of outcomes.

Book Evalutation of Two Nutrition Education Programs The Expanded Food and Nutrition Education Program EFNEP and Out for Lunch OFL

Download or read book Evalutation of Two Nutrition Education Programs The Expanded Food and Nutrition Education Program EFNEP and Out for Lunch OFL written by and published by . This book was released on 2004 with total page pages. Available in PDF, EPUB and Kindle. Book excerpt: The purpose of this study was to examine the behavior changes, barriers to preparing healthy meals, quality of life and internal locus of control with two nutrition education programs EFNEP and OFL. Data for this study were collected by surveying participants in the EFNEP and OFL Program before and after participation in the programs. The research was guided by the following questions. (1) Do participants change behavior after participating in EFNEP or OFL?; (2) Are participants able to overcome barriers that prevent them from preparing healthy meals after participating in EFNEP or OFL?; (3) Do participants demonstrate an increase in their quality of life after participating in EFNEP or OFL?; (4) Do participants experience changes in their perceived control of their environment after participating in EFNEP or OFL?, and (5). What effect, if any, does the method of program delivery have on change in behaviors, overcoming barriers to healthy meals, a change in locus of control and quality of life after participating in EFNEP or OFL? Among the 268 respondents, there were 141 respondents from the OFL Program and 127 from EFNEP. The majority of the participants were female, African-American, between the ages of 21-30 and had a high school education or less. Data analysis revealed participation in EFNEP and OFL nutrition education programs influences behavior change with low-income clients and perceived quality of life improved for respondents after participating in the two programs. Participation in EFNEP and OFL did not impact clients in overcoming barriers in preparing healthy meals, and participation in the programs did not seem to have an influence on the perceived control of one's life. Changes in behavior were not dependent on the method of delivery for the two programs EFNEP and OFL.

Available in PDF, EPUB and Kindle. Book excerpt: Abstract: An historical and statistical profile of the education efforts of the Expanded Food and Nutrition Education Program (EFNEP) covers the period from November, 1968 through September, 1977. The program was charged to educate families living in or near poverty to acquire knowledge, skills, and changes in behavior to achieve adequate diets providing normal nutrition. 1.5 million families were taught in the program influencing, in turn 6 million family members' diets; 3.5 million youth participated in EFNEP's 4-H food and nutrition activities. EFNEP focuses on knowledge of how to use available food resources and the importance of nutrition. Initial pilot projects showed the feasibility of EFNEP. Paraprofessional aides and existing extension home economics programs were employed. Existing national, state, and county programs and personnel share EFNEP responsibility. EFNEP has had a positive impact on the diets of program families.

Book SNAP Ed Can Improve Nutrition of Low Income Americans Across Life Span

Download or read book SNAP Ed Can Improve Nutrition of Low Income Americans Across Life Span written by James C. Hersey and published by RTI Press. This book was released on 2014-06-19 with total page 10 pages. Available in PDF, EPUB and Kindle. Book excerpt: Nutrition education in the Supplemental Nutrition Assistance Program (SNAP-Ed) is designed to promote healthy eating behaviors in a low-income target population. In particular, SNAP-Ed programming encourages participants to increase consumption of fruit and vegetables and switch to lower fat dairy products. With funding from the U.S. Department of Agriculture’s Food and Nutrition Service (FNS), we independently evaluated eight programs that were selected as possible model SNAP-Ed programs. Our evaluations used robust research designs (experimental or quasi-experimental), similar primary outcome measures across the studies, and statistical analyses to account for clustering of participants within settings. These evaluations found a significant effect in outcomes for four programs: one in child care settings, two in elementary schools, and one in senior centers, suggesting that SNAP-Ed has the potential to be effective for some individuals across all age groups. Additionally, the study findings suggest that the maturity of the program (that is, experience in implementing the program over time) may make nutrition education more effective. Future studies should assess the longer-term effects on nutrition behaviors and sustainability of SNAP-Ed programs for preschool- and elementary-aged children, adults, and senior citizens.
