Book excerpt: FAO provides countries with technical support to conduct nutrition assessments, in particular to build the evidence base required for countries to achieve commitments made at the Second International Conference on Nutrition (ICN2) and under the 2016-2025 UN Decade of Action on Nutrition. Such concrete evidence can only derive from precise and valid measures of what people eat and drink. There is a wide range of dietary assessment methods available to measure food and nutrient intakes (expressed as energy insufficiency, diet quality and food patterns etc.) in diet and nutrition surveys, in impact surveys, and in monitoring and evaluation. Differenct indicators can be selected according to a study's objectives, sample population, costs and required precision. In low capacity settings, a number of other issues should be considered (e.g. availability of food composition tables, cultural and community specific issues, such as intra-household distribution of foods and eating from shared plates, etc.). This manual aims to signpost for the users the best way to measure food and nutrient intakes and to enhance their understanding of the key features, strengths and limitations of various methods. It also highlights a number of common methodological considerations involved in the selection process. Target audience comprises of individuals (policy-makers, programme managers, educators, health professionals including dietitians and nutritionists, field workers and researchers) involved in national surveys, programme planning and monitoring and evaluation in low capacity settings, as well as those in charge of knowledge brokering for policy-making.

Book excerpt: This study assessed nutrition and anthropometric parameters at pre- and post-nutrition education intervention of 80 collegiate athletes. The purpose was to determine if participation in individualized nutrition counseling would improve body fat composition and have a positive influence upon macronutrient, carbohydrate, percentages in Division I collegiate athletes. The collected findings are to serve as a guideline for the development of individualized nutrition education counseling to increase positive changes in macronutrient distribution and decrease body fat percentages. Five athletic teams from California State University, Northridge participated in this study over the course of one academic year in a quasi-experimental design. Athletes completed two body fat measurement tests in the BOD POD, as well as two separate dietary analyses: pre and post-nutrition counseling. Subjects included 66 female (82%) and 14 male (18%) athletes. This study suggests that the CSUN varsity athlete could benefit from additional individualized nutritional counseling, particularly regarding the understanding of the role of macronutrients pre and post training.

All of these diseases have a direct link to dietary intake. The ultimate goal of nutrition education is improved long-term health, therefore, this project determined that nutrition education, of at least eight weeks in duration, resulted in a diet that more closely reflects the RDAs for the individual's sex-age group. Three studies were conducted as part of this research. First, University of Missouri--Columbia students enrolled in Food Science and Human Nutrition 34 (FSHN 34) were sampled three times throughout the sixteen-week duration of their coursework--day one, following eight weeks of education, and following sixteen weeks of education--in the fall semester of 1996. The second study compared nutrition education students with a national cohort of similar aged participants--CSFII 1994-1996. The third study compared nutrition education students with other University of Missouri students with no nutrition education, eight weeks of nutrition education, and sixteen weeks of nutrition education in a prior semester. Each of these studies was able to show that with at least eight weeks of nutrition education, nutrient intake was significantly improved to more closely reflect the RDA. This study was unique in to the literature in two ways: (1) the focus was on nutrient intake following nutrition education and (2) students were studied once the education had been completed to determine long-term behavior change. Research has shown that positive behavior change, including a diet closely reflecting the RDA, sustained long-term will reduce the risk of nutrition-related disease states. This project demonstrated repeatedly that FSHN 34 at the University of Missouri--Columbia is able to influence positive changes in dietary behavior after eight weeks of instruction. This project also revealed that students who had completed the sixteen-week course, at least one semester previous, had their daily diet revert to one similar to students who had no nutrition education. This study has concluded that behavior change is transient. Unless the behavior change can be sustained over a longer period of time, students will not benefit from a reduction in disease risk.

In literature published since the early 1970s numerous studies have documented the prevalence of malnutrition in hospitalized patients. Although the reported incidence of malnutrition in acute care patients varies from study to study, the numbers are consistently high, ranging between 40 and 60%, regardless of age, diagnosis, or medical service. The consequences of malnutrition range from loss of lean body mass and longer hospital stays, to increased risk of pressure ulcers, increased morbidity, and increased mortality. Evidence shows that nutrition assessment and nutrition intervention can help reduce the consequences of malnutrition. One of the tools used for assessing nutrition status and the risk of malnutrition is the calorie count, which can determine whether a patient is meeting his or her nutrition needs via oral food intake or whether the patient requires nutrition support. Calorie counts in acute care are often conducted by dietary staff who are not properly trained to accurately assess a patient's intake. The purpose of this project was to develop a nutrition training program for dietary staff to educate them regarding the importance of and correct process for completing calorie counts, and provide the training to the staff. Related literature shows that the common method of estimating intake, the "overall" estimation method, significantly overestimated intake for the majority of residents and failed to identify residents with inadequate intake 65% of the time. However, when tray items were estimated individually using a Food and Fluid Estimation Diagram, trained observers were able to accurately estimate intake 85% of the time. The instrument of education used for the current study was based on the Food and Fluid Estimation Diagram using digital photography of menu items at various stages of consumption as a reference. Two in-service sessions were conducted with a total of 18 participants; each session was attended by 9 participants. A total of 14 participants consented to allow their data on the pre-test calorie count and the post-test calorie count to be used for this study, resulting in 10 usable data sets. The average pre-test score was 76.8% and the average post-test was 77.1% showing a negligible increase of .3%. However, when the data are separated into session sets, clear differences in pre-test and post-test scores are observed. The morning session had a pre-test average score of 75.8% and a post-test average score of 79.4%. Five of the seven morning group participants improved their average test scores. The afternoon session had a pre-test average score of 79.1% and a post-test score of 71.9%. All three of the afternoon group participants showed a decrease in their average scores. It is possible that the afternoon group results were influenced by a disruption to the in-service education. When considered as a whole, there was a negligible increase in the accuracy of calorie counts. However, when the results are considered as separate sessions, the morning group indicated a positive effect from the education. These results confirm the positive finding of other research conducted on the accuracy of food intake estimates, indicating that improved accuracy can be obtained with education and training.
