Book excerpt: Master's Thesis from the year 2020 in the subject Business economics - Market research, grade: 65, University of Salford, language: English, abstract: In this exploratory dissertation the influence of wine packaging on the consumer’s perception of quality is examined. The focus of this dissertation will be the German Speaking part of Switzerland (GSP). For this research, wine in traditional glass bottles (0.75 liter) will be compared to wine from Bag-in-Box (BiB; 3 liter) in a qualitative research questionnaire in combination with a blind wine tasting and semi structured interviews. The research will be reflecting the perception of the consumers in Switzerland, showing what kind of influence the packaging has on the consumer. A multi method approach is applied 1) A white wine is filled from the Bag in Box into a traditional glass bottle. Afterwards the same wine was presented in a blind tasting, once in a covered bottle and once in the BiB, to a selected tasting panel that fills out a self-completion questionnaire, to see if the packaging has a direct influence on the perception of quality. 2) In addition, qualitative semi-structured interviews are conducted with people working in the wine industry to assess their perception in regards to the packaging. A manual database of categories was created, which has grown through a continuous comparison of data coding and concepts, based on the findings and arguments of the used literature.

However, they are associated with causing multiple adverse effects to the wine they are attempting to preserve. Alternative closures such as synthetic corks and screw caps were developed in order to reduce and/or eliminate these problems. However, the major cause of concern regarding these closures is of consumers' acceptance. The effect of how three types of closures (Natural Cork, Synthetic Cork and Screw Cap) affected wine consumers' perceptions of the quality of wine was examined in this study. This project was divided into two experiments. The first experiment determined if frequent wine consumers could detect sensorial differences between the three closure types. The second experiment ascertained if and how regular wine consumers' perceptions were altered based on the type of closure with which the wine samples were bottled. It was determined that the wine consumers could not significantly detect a difference between any of the three closure type samples based only on sensory stimuli. The results from the second experiment found for the Chardonnay samples, the knowledge that the wine samples came from a natural cork or a synthetic cork did not significantly affect the liking, quality or purchase intent scores. However, when the panelists knew that the sample was bottled with a screw cap, they thought it was of lower quality, were less willing to buy a wine like the sample and they lowered the price they were willing to pay. For the Merlot samples, knowledge that the sample came from a natural cork caused the wine consumers to significantly increase both their opinions of the quality of the wine and the amount they were willing to pay for the wine. When they knew that the sample was bottled with a screw cap, they reduced the price they would pay for the wine.

Book excerpt: This research reports on an exploratory study of consumers’ responses towards tasting notes represented on the back labels of the wine bottles. Two popular varieties from New Zealand – Sauvignon blanc and Pinot noir were chosen for this experiment. Responses for eight different back labels were examined and recorded through an on-line questionnaire. ANOVA and multiple regression show that two of the consumer segments based on their level of involvement were affected more than the other. Overall, graphical representation of the tasting notes showed more effect on consumers’ expectation of the sensory properties of wine than the traditional text label and scale label. As observed in past research, this research found higher involved consumers to be rational thinkers who preferred traditional, textual tasting notes. The thesis also contributed by showing that the construct of involvement for wine shared common facets with other constructs such as exploratory behaviour tendencies. This link in the two constructs provided an opportunity to refine the understanding of the involvement construct.
