Farms in New France is given as cattle, sheep and swine.1' By 1765 the number of animals in Canada was shown to be oxen, young cattle, cows, sheep and swine.2 With the coming of. The United Empire Loyalists and the establishment of settlements in the Eastern Towns-hips of Quebec and in Ontario, live, stock were introduced into those sections of the country. The founding of the Red River settlement, during the early part of the nineteenth century, resulted in the introduction. Of cattle west of the Great Lakes. During the early stages of development, live stock were slaughtered mainly for home consumption, the surplus meat finding an outlet In the adjoining towns and lumber camps and to a limited extent in export trade. Cattle were delivered on the hoof to retail butchers who operated their own slaughter houses. Hogs and sheep were usually slaughtered on the farm. As larger urban centres emerged local packing plants came into being. These drew their supplies from farther afield but the method of marketing continued to be the most direct possible, namely, from producer to packer either by direct sale or through the medium of local buyers or drovers. Stockyards. - The development of an export trade in cattle, beginning about 1870, resulted in an expansion of the live stock industry and caused supplies to be drawn from still more remote areas. The first Stockyards were established to provide facilities for the assembling and handling of large numbers of live stock at the head of ocean navigation. Later central yards were established, often by the railway companies, on which a number of dealers operated. The first to be established was the Montreal Stockyards at Point St. Charles which commenced operations in 1885. The Toronto Stockyards were established in 1888. Resources would be utilized to produce the most desirable pro duct. It is a function of the pricing system.to direct the efforts of producers in the direction of utility or usefulness of their products. Unless it is allowed to do that it is not carrying out its proper function. Under a system.of paying a differential price for meat type hogs, those producers who raise and market hogs of that type would receive an enhanced income. If the change to meaty hogs W're more nearly'universal, some economic gain would accrue to the entire industry from replacing 10wbprtced fat with higher-priced lean. However, as more lean and less fat were produced the wide price differential between the two would be narrowed somewhat. The lower price for lean would at least partially offset the bigger quantity to be sold. Dollar income to the industry as a.whole would not be increased enough to be the sole or main reason for changing the kind of hog producedg, The justification is rather in the factors already'named, fitting production to the expressed preferences of consumers, rewarding the producer who does so, and therebmaking best use of the corn from 30 to 35 million crop acres that annually is fed to hogs. Livestock and Meat Products Domestic hides and skins come onto the market in a wet-salted condi tion. The dealer cures tham.in his hide cellars. Although two saltings are standard, many hides receive a third salting. Domestic hides generally command a higher price than the imported ones. Progress in production and distribution of meat and livestock products has been offset by continued rapid population growth. Thus, although meat production increased 125 percent from the 193640 average to 1958, per capita consumption has remained very low. Only pounds of meat were consumed by the average Japanese during 1958. Almost 88 percent of Japan's tallow supply goes into soap manufacturing. About 1] percent is used by margarine manufacturers, 3 percent by lubricant and grease manufacturers, and 1+ percent by other industrial users. Only 1 percent is used for direct human consumption. No tallow is used in animal feeds in Japan at present. Soap consumption has risen rapidly in recent years. In 1958, about 730 million pounds of soap were produced, 3 percent above 1957, and 57 per cent above the prewar (193640) average. However, Japanese soap and detergent consumption remains very 10w-8 pounds per person in 1958-compared with 26 pounds for the United States.
