Book The Great Western Cook Book

Download or read book The Great Western Cook Book written by A.M. Collins and published by Andrews McMeel Publishing. This book was released on 2014-04-15 with total page 149 pages. Available in PDF, EPUB and Kindle. Book excerpt: This first cookbook published in Indiana was originally titled in its first edition Mrs. Collins’ Table Receipts: Adapted to Western Housewifery. It became so popular that in 1857 it was republished in New York City under the name The Great Western Cook Book. Collins noted in her preface that the book was intended for “Ladies of the West,” and thus there are recipes such as Sausage-Hoosier Fashion and Veal-Western Fashion included for pioneer women in the “West” of its time. Noting that “Our generous and prolific clime affords a bountiful supply of nutritious fruits and vegetables, and our forests and hill sides abound in excellent Game,” Collins included many recipes that used local produce and ingredients. The first recipe in the book for California Soup provides a method for homemade bouillon cubes, named for travelers heading further west during the gold rush years. This edition of The Great Western Cook Book by Angelina Maria Collins was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Book The Blue Grass Cook Book

  • Author : Minnie C. Fox
  • Publisher : University Press of Kentucky
  • Release : 2014-07-11
  • ISBN : 0813149479
  • Pages : 445 pages

Download or read book The Blue Grass Cook Book written by Minnie C. Fox and published by University Press of Kentucky. This book was released on 2014-07-11 with total page 445 pages. Available in PDF, EPUB and Kindle. Book excerpt: African American cooks were not strangers in the kitchens of the Old South, but white southerners often failed to acknowledge their contributions. One of the first exceptions was Kentucky socialite Minnie C. Fox, who recognized the significant influence and importance of the African American cooks and wrote The Blue Grass Cook Book, first published in 1904. From biscuits and hams to ice creams and puddings, this cookbook is a collection of over three hundred recipes from family and friends, including black cooks, near Minnie Fox's Bourbon County, Kentucky, family estate and her Big Stone Gap, Virginia, home. In Fox's time, the culinary history of black women in the South was usually characterized by demoralizing portraits of servants toiling in "big house" kitchens. In contrast, The Blue Grass Cook Book, with its photographs of African American cooks at work and a passionate introduction by Fox's brother, respected Kentucky novelist John Fox Jr., offers insight into the complex bond between well-to-do mistresses and their cooks at the turn of the century. Toni Tipton-Martin's new introduction provides in-depth commentary on the social, cultural, and historical context of this significant cookbook. She presents background information on the Fox family and their apparently uncommon appreciation for the African Americans of their time. She reveals the vital role of the black cooks in the preparation and service required in establishing the well-known Southern hospitality tradition.

Download or read book My Mother s Cook Book written by Ladies of St. Louis and published by Andrews McMeel Publishing. This book was released on 2013-10-15 with total page 263 pages. Available in PDF, EPUB and Kindle. Book excerpt: The category of “charity cookbook” is a favorite in American culinary history. Funds raised by sales of these cookbooks, with recipes donated by women’s groups and church societies, were used to aid a wide variety of local causes and charities. My Mother’s Cook Book belongs in this category—an excellent example of regional cooking styles of the post-Civil War Midwest. Several hundred recipes compiled by Ladies of St. Louis for the Women’s Christian Home include a complete range of dishes from soup to nuts, tending toward dishes “my mother” used, and handed down from mother to daughter. The ladies’ droll sense of humor is captured in the preface: “The recipes gathered in this priceless volume have been sent from all parts of the known world; several even from New Jersey.” Although the ladies are unnamed, a dedication by Mrs. E. F. Richards and the Misses Glover thanks all the contributors as well as local advertisers who aided the project (ads for merchants selling a wide variety of merchandise, including the “latest gems of fashion,” are included at the front of the book). This edition of My Mother’s Cook Book was reproduced by permission from the volume in the collection of the American Antiquarian Society, Worcester, Massachusetts. Founded in 1812 by Isaiah Thomas, a Revolutionary War patriot and successful printer and publisher, the society is a research library documenting the lives of Americans from the colonial era through 1876. The society collects, preserves, and makes available as complete a record as possible of the printed materials from the early American experience. Book River Cafe Cook Book Green

Download or read book River Cafe Cook Book Green written by Rose Gray and published by Random House. This book was released on 2013-04-26 with total page 644 pages. Available in PDF, EPUB and Kindle. Book excerpt: Ruth Rogers and Rose Gray have an unswervingly clear vision of how food should be cooked: they take immense care over the ingredients and cook them as simply as possible. But one vitally important element in the art of preparing good food is one which we have increasingly lost sight of: seasonality. If you cook food in its right season it will inevitably taste better. And that's what River Cafe Cookbook Green is all about. Divided into months, the twelve chapters look at which vegetables, herbs, leaves, fungi and fruits are at their best at any given time, with information on how they are grown, which varieties to select and how to prepare them. The focus is also on organic produce, something in which Ruth and Rose have come to believe passionately. Meat and fish recipes are certainly included in the book, but the emphasis here is much more on vegetables, pasta recipes etc, in line with the way we are increasingly eating today. Fully illustrated throughout, and even larger than before, this cookbook is an education as well as a culinary treasure-trove.
