Book excerpt: Aflatoxins produced by Aspergillus flavus and Aspergillus parasiticus are contaminants of peanut (Arachis hypogea L.). Aflatoxin contamination is a serious concern given their hepatotoxic properties and their widespread occurrence during cultivation, harvest, drying and storage. Management of aflatoxin contamination of peanut is very important using cultural practice such as habitat management, soil amendments and pre- and post-harvest managements, using physical control methods, biological control methods and chemical control methods at harvest, drying, pre-storage and storage periods. Some procedures such as upkeep of low temperature and relative humidity (RH) in storage, keeping away the pod- and seed-feeding insects, doing the harvest and post-harvest procedure control, fast post-harvest drying, optimal timing of digging and harvest, providing optimum water to the crop through irrigation, avoiding mechanical damage during cultivation and optimal timing of digging and harvest might prevent the contamination of aflatoxin. In this review, various strategies for control of aflatoxin in peanuts in all periods are discussed.

Book excerpt: The production and utilization of groundnut have increased tremendously across all provinces of Mozambique. However, the presence of aflatoxins has remained a critical food concern in the human diet. In this study, the effect of harvesting time and drying methods on aflatoxin contamination was examined in Northern Mozambique. A randomized complete block design in a split-split plot arrangement with four replications was used with groundnut varieties as the main plot and harvesting dates and drying methods as the subplots. Groundnut samples were analyzed for aflatoxin using the Mreader. In both locations, field observations indicated that on average, aflatoxin contamination levels were lower at physiological maturity (,â§10¬†ppb) compared to harvesting 10¬†days before (,â§15¬†ppb) and 10¬†days after physiological maturity (,â•20¬†ppb). It was also observed that the two drying methods were effective in prevention of aflatoxin contamination on groundnut kernels to levels lower than 20¬†ppb. Aflatoxin contamination levels were significantly lower (,â§12¬†ppb) as a result of the A-Frame than the tarpaulin method. The results of this study, therefore, have indicated that proper postharvest management of groundnuts, such as harvesting at physiological maturity and improved drying, gave lowest aflatoxin contamination levels.

Book excerpt: Aflatoxins are fungal metabolites—mainly produced by Aspergillus flavus and Aspergillus parasiticus living in soil—that contaminate crops throughout growth, harvest, storage, transportation, and processing. Aflatoxin B1 is not only the most potent natural carcinogen known, but also the most commonly produced toxic strain. As of 2010, roughly 5 billion people worldwide were estimated to be exposed to high levels of aflatoxins. High consumption levels can result in aflatoxicosis, which is often fatal. Habitual consumption at lower levels causes liver cancer and immune suppression, and is strongly associated with stunting. Of 315 cases of aflatoxicosis in Kenya in 2004, 125 people died. Consumption of aflatoxins is cumulative: they are not eradicated through standard cooking processes, and the body is unable to destroy or excrete them. This policy note examines what aflatoxins are; how they are linked to gender, climate change, and nutrition; and how they can be controlled and managed effectively.

Book excerpt: This book provides an evaluation of measures to reduce exposure to highly toxic and carcinogenic contaminants in staple diets in Africa as well as parts of Asia and Latin America. Many of the poorest people in these regions are exposed to the pervasive natural toxins, aflatoxins and fumonisins, on a daily basis by eating their staple diet of groundnuts, maize, and other cereals. Exposure to mycotoxins at these high levels substantially increases mortality and morbidity. Aflatoxins are a cause of human liver cancer, and fatalities from acute aflatoxin poisoning outbreaks occur in Africa and Asia. The International Agency for Research on Cancer convened a Working Group of world-leading experts to review the health effects of aflatoxins and fumonisins and to evaluate intervention measures. The panel concluded that these mycotoxins not only are a cause of acute poisoning and cancer but also are a likely contributor to the high levels of stunting in children in affected populations. The Working Group also identified effective measures to reduce exposure in developing countries. The panel evaluated 15 interventions, considering the strength of the evidence as well as its completeness and its transferability at an individual, community, or national level. Four of the interventions were judged to be ready for implementation: improvement of dietary diversity; crop sorting; post-harvest measures, including improved storage; and, in Latin America for maize, optimized nixtamalization. These recommendations would be relevant for investment of public, nongovernmental organization, and private funds at the scale of the subsistence farmer, the smallholder, and through to a more advanced value chain.

The first essay uses a unique dataset that combines aflatoxin test results with detailed survey data to examine how the constraints Ghanaian households face affect their peanuts production, drying, and storage practices, and how these practices affect aflatoxin levels. Results show a significant association of high aflatoxin levels with delayed harvest and drying on bare dirt, while sorting by quality results in a reduction in aflatoxin levels. The second essay assesses the effect of post-harvest measures (here improved methods of groundnuts drying and storage) on aflatoxin contamination levels in peanuts crops for subsistence farmers in the Northern and Upper East Region of Ghana. The result shows that sun drying on a tarpaulin reduces aflatoxin levels in groundnuts by approximately 40 percent compared to status quo methods of drying.

Book excerpt: Peanuts are commonly infected with yellow molds or Aspergillus flavus during pre- and post-harvest stages, storage and transportation resulting in aflatoxin contamination. Consumption of aflatoxin contaminated peanuts causes health hazards like; liver cancer, stunted growth and mental retardation, immune system suppression, allergies, and death in both humans and livestock. Recommended agronomic practices, good pre and post-harvest practices, chemical and biological control have been emphasized to overcome the above hazards. Adopting resistant varieties against Aspergillus flavus and aflatoxin contamination is considered as a cost effective strategy. Evaluation of different peanut varieties to A. flavus infection, determination of predominant Aspergillus species and levels of aflatoxin contamination in peanut varieties were the objectives of this study. Results showed that none of the varieties was immune to A. flavus infection. Differences were observed in the level of mycelial growth under different treatments. The Aspergillus species isolated from peanut kernels were; A. niger, A. flavus, A. nidulans and A. fumigatus. The aflatoxin contamination levels ranged from 6 to 27 ppb.
