Bitumens are produced by distillation of crude oil during petroleum refining, and also occur naturally. Bitumens can be divided into six broad classes, according to their physical properties and specifications required for different applications. The major use (about 80%) of bitumens is for road paving; other uses include roofing, waterproofing, sealing and painting. The term "bitumen" should not be confused with "asphalt", which refers to the mixture of bitumen (4-10% by weight), small stones, sand and filler used for road paving. Bitumens are complex mixtures that contain a large number of organic chemical compounds. Application of bitumens may generate emissions (fumes and vapours) that may contain, among volatile and non-volatile compounds, a number of known or probable carcinogens. An IARC Monographs Working Group reviewed epidemiological evidence, animal bioassays, and mechanistic and other relevant data to reach conclusions as to the carcinogenic hazard to humans of various occupations that entail exposure to bitumens and bitumen emissions, including road paving, roofing, and application of mastic asphalt, and to various heterocyclic polycyclic aromatic compounds.

Food processing can also improve food safety by destroying or eliminating naturally occurring toxins, chemical contaminants, and antinutritive factors. Unfortunately, processing can also cause chemical changes that result in the formation of toxic or antinutritive factors. The purpose of this book is to summarize our knowledge of both the beneficial and deleterious effects of processing. Chapter I con siders the consumer's perceptions about food contaminants and food processing. Chapter 2 summarizes the effects of traditional and nontraditional processing methods on microor ganisms in food. Chapters 3-6 review the effects of processing on lipids (fatty acids and cholesterol) in food. Changes in the nutritive value of vitamins and minerals as a result of processing are discussed in chapter 7. Chapter 8 concentrates on how processing reduces the allergenicity of some foods.

This report specifically reviews the evidence on the potential mechanisms by which smoking causes diseases and considers whether a mechanism is likely to be operative in the production of human disease by tobacco smoke. This evidence is relevant to understanding how smoking causes disease, to identifying those who may be particularly susceptible, and to assessing the potential risks of tobacco products.

High percentages of polyarenes, representing a wide range of molecular sizes and structural types, are present in coal tars and petroleum residues. The major sources of PAHs are crude oil, coal and oil shale. The fuels produced from these fossil sources constitute the primary source of energy for the industrial nations of the world, and the petrochemicals from these raw materials are the basis of the synthetic fibre and plastics industries. PAHs are however, widespread pollutants and their impact on the environment and human health must be monitored and controlled. This book will review and assess our scientific understanding of the ecological exposure and effects PAHs have in different environments and habitats. It will accomplish this by taking the recipients of the pollution in the environment as starting points and working its way back through pathways to access what is required for our understanding of effects and rationale for control. Although this book will concentrate on ecological exposure of PAHs, the general impacts of PAHs on human populations will be touched upon. It is thought to be the first book to focus on the ecological aspects of PAHs.
