Book excerpt: The emergence of marine and freshwater toxins in geographical areas where they have never been reported before is a concern due to the considerable impact on (sea)food contamination, and consequently, on public health. Several groups of marine biotoxins, in particular tetrodotoxins, ciguatoxins, and palytoxins, are included among the relevant marine biotoxins that have recently emerged in several coastal areas. A similar situation has been observed in freshwater, where cyanobacterial toxins, such as microcystins, could end up in unexpected areas such as the estuaries where shellfish are cultivated. Climate change and the increased availability of nutrients have been considered as the key factors in the expansion of all of these toxins into new areas; however, this could also be due to more intense biological invasions, more sensitive analytical methods, or perhaps even an increased scientific interest in these natural contaminations. The incidences of human intoxications due to the consumption of seafood contaminated with these toxins have made their study an important task to accomplish in order to protect human health. This Special Issue has a focus on a wide variety of emerging biotoxin classes and techniques to identify and quantify them.

These new, or innovative, technologies are in various stages of development, including some still at the R&D stage, and others that have been commercialised as alternatives to conventional processing technologies. Food process engineering comprises a series of unit operations traditionally applied in the food industry. One major component of these operations relates to the application of heat, directly or indirectly, to provide foods free from pathogenic microorganisms, but also to enhance or intensify other processes, such as extraction, separation or modification of components. The last three decades have also witnessed the advent and adaptation of several operations, processes, and techniques aimed at producing high quality foods, with minimum alteration of sensory and nutritive properties. Some of these innovative technologies have significantly reduced the thermal component in food processing, offering alternative nonthermal methods. Book excerpt: Phytoplankton blooms, micro-algal blooms, toxic algae, red tides, or harmful algae, are all terms for naturally occurring phenomena that have occurred throughout recorded history. About 300 hundred species of micro algae are reported at times to form mass occurrence, so called blooms. Nearly one fourth of these species are known to produce toxins. Even non-toxic algal blooms can have devastating impacts when they lead to kills of fish and invertebrates by generating anoxic conditions. Some algal species, although non-toxic to humans, can produce exudates that can cause damage to the delicate gill tissues of fish (raphidophytes Chattonella, Heterosigma, and dinoflagellates Karenia, Karlodinium) . Aquatic animals can suffer devastating mortalities, which could lead economical and food losses, and eventually became a food security problem. Of greatest concern to humans are algal species that produce potent neurotoxins that can find their way through shellfish and fish to human consumers where they evoke a variety of gastrointestinal and neurological illnesses (paralytic shellfish poisoning (PSP), amnesic shellfish poisoning (ASP), diarrhoeic shellfish poisoning (DSP), neurotoxic shellfish poisoning (NSP), azaspiracid shellfish poisoning (AZP) and ciguatera fish poisoning (CFP)). Worldwide, ciguatoxins are estimated to cause around 50 000 cases of ciguatera fish poisoning annually; neurological effects may last for weeks or even years and one percent of these cases are fatal . Climate change and costal water over enrichment create an enabling environment for harmful algal blooms, which seem to have become more frequent, more intense and more widespread in the past decades.

Hundreds of toxins have been identified so far. Detection methods, including rapid screening, have been developed to help us learning more about them, especially to find out which toxins are a real threat for people and what conditions encourage their production and accumulation. Early detection of algal toxins is an - portant aspect for public safety and natural environment, and significant efforts are underway to develop effective and reliable tools that can be used for this purpose.
