Para paliar los posibles efectos negativos del empleo de esta tecnología se han desarrollado una serie de recursos aplicables para asegurar el correcto desarrollo de la fermentación. Esta Tesis Doctoral estudia la incidencia de la utilización de estos recursos en la selección natural de cepas de Saccharomyces cerevisiae que dirigen la fermentación, puesto que las características enológicas de los clones dominantes durante la fermentación influirán en el desarrollo de la misma y en las características del vino obtenido. Durante cinco campañas consecutivas, de 1994 a 1998, se realizaron diferentes elaboraciones partiendo de mosto blanco de la variedad Viura en la D.O. Ca. Rioja. Los sistemas de desfangado utilizados fueron desfangado estático y desfangado mediante filtro rotativo. Los recursos estudiados fueron: adición de materia nitrogenada (fosfato diamónico y un activador comercial con sulfato amónico), aireación (mediante inyección directa de oxígeno y mediante trasiegos), adición de factores de supervivencia (Ergosterol), adición de cortezas de levaduras y adición de sustancias con efecto soporte (celulosas con diferentes características físicas). Como resultados más interesantes cabe destacar que el método empleado en el desfangado de los mostos influyó en la distribución del factor killer y en la distribución de los clones de Saccharomyces cerevisiae. En condiciones problemáticas de fermentación (altas temperaturas o elevada presencia de clones no-Saccharomyces), las cortezas de levadura y una de las celulosas estudiadas mostraron cierta influencia sobre la distribución clonal. El desarrollo de la fermentación se vio favorecido por la adición de cortezas de levaduras y soporte inertes, la aireación y los factores de supervivencia, mientras la adición de materia nitrogenada supuso una mejora desigual.
