Book The Oxford Companion to Food

Download or read book The Oxford Companion to Food written by Alan Davidson and published by OUP Oxford. This book was released on 2006-09-21 with total page 1944 pages. Available in PDF, EPUB and Kindle. Book excerpt: The Oxford Companion to Food by Alan Davidson, first published in 1999, became, almost overnight, an immense success, winning prizes and accolades around the world. Its combination of serious food history, culinary expertise, and entertaining serendipity, with each page offering an infinity of perspectives, was recognized as unique. The study of food and food history is a new discipline, but one that has developed exponentially in the last twenty years. There are now university departments, international societies, learned journals, and a wide-ranging literature exploring the meaning of food in the daily lives of people around the world, and seeking to introduce food and the process of nourishment into our understanding of almost every compartment of human life, whether politics, high culture, street life, agriculture, or life and death issues such as conflict and war. The great quality of this Companion is the way it includes both an exhaustive catalogue of the foods that nourish humankind - whether they be fruit from tropical forests, mosses scraped from adamantine granite in Siberian wastes, or body parts such as eyeballs and testicles - and a richly allusive commentary on the culture of food, whether expressed in literature and cookery books, or as dishes peculiar to a country or community. The new edition has not sought to dim the brilliance of Davidson's prose. Rather, it has updated to keep ahead of a fast-moving area, and has taken the opportunity to alert readers to new avenues in food studies.

Book The Almonds and Related Species

Download or read book The Almonds and Related Species written by Alireza Rahemi and published by Springer Nature. This book was released on 2024 with total page 199 pages. Available in PDF, EPUB and Kindle. Book excerpt: Zusammenfassung: Almond and peach species have global importance as food crops as well as use in landscaping including restoration and reforestation. Because currently available breeding germplasm has a very narrow genetic base, genetic improvement programs are turning to wild germplasm as sources of improved quality, productivity and resistance traits. This germplasm is also enabling the dramatic modification of traditional cropping systems as with the transfer of self-fruitfulness from related wild almond and peach species to normally self-sterile cultivated almond. While presence of an extensive wild almond and related germplasm has been documented in the literature over the past century, most information remains dispersed and often not generally accessible owing to its publication in treatises and journals of limited distribution. This monograph brings together a comprehensive characterization of almond and its related species including the cultivated and wild peaches. Because it represents the only comprehensive source of information on almond, peach and their wild relatives, it represents a basic reference text of interest to researchers in both the basic and applied plant and ecological sciences

Book Science of Food Nutrition and Health

Download or read book Science of Food Nutrition and Health written by Vinod Puri and published by Austin Macauley Publishers. This book was released on 2023-07-21 with total page 583 pages. Available in PDF, EPUB and Kindle. Book excerpt: Diet is one of the important facets of comprehensive approach to good health along with physical, social, emotional, and intellectual well-being. During the second half of the 20th century, we witnessed a dramatic change in our eating patterns and lifestyle aided by agricultural and industrial revolution, globalisation, and urbanisation and emergence of associated diet related chronic diseases such as obesity, coronary heart disease, hypertension, diabetes, some type of cancer, stroke, and degenerative arthritis. The science of food and nutrition is very complex. Nutrition science like many other fields of science is evolutionary and there are always conflicting research outcomes that need to be carefully evaluated. We ingest hundreds of dietary components every day and understanding various metabolic pathways and the effect of interactions of various dietary components in vivo is rather challenging. Recent advances in genetic research fostered the emergence of new disciplines such as nutrigenomics, proteomics, metabolomics, and transcriptomics which can shed light on the molecular level interaction between dietary nutrients and the genome. These technologies provide the vision for future nutrition research that may unravel how the diet/genome interactions modifies the phenotype. Food may not be the overall cure for the treatment of every possible disease, but the importance of food in both causing and relieving certain problems cannot be neglected. This is one of the most researched topics and there is a lot written about it. However, this book is probably the only text that provides up to date information on the various interrelated topics on food and nutrition that would be of interest to wider community.
