Any unoccupied corner of an outbuilding or shed can be utilized. A rough framework of boards enclosing the necessary space and affording protection from the weather is all that is required. About 40 cubic feet should be allowed for every ton of ice to be stored. There should be no floor in this kind of an icehouse. If the soil is light and porous no special provision need be made for drainage. If it is impervious clay it will be better to provide some drainage. The earth should be covered to a depth of 6 to 12 inches with small stone, coarse gravel or cinders. About one foot of sawdust or plan ing-mill shavings should be placed under the ice. A space of at least one foot should be left between the ice and the walls, to be filled with sawdust or planing-mill shavings, the latter preferred. Cover the ice with one foot of the same material. The skin gradually faded and shriveled after the second week. At the end Of the period the pulp Of the fruit was firm, Of good color and perfect flavor. The same variety, picked ripe, kept well for 30 days, but at the end Of a period Of 57 days had deteriorated in color and appearance externally, while the pulp was still perfect in flavor. Specimens Of the same varieties Of star apples, picked green, half-ripe and ripe were placed in refrigeration at a temperature Of 45° F. For a period Of 40 days. The same changes were Observed as in fruit held at 32° F. The deterioration was somewhat more rapid, however, and molds developed more extensively on skin abrasions. The color of the skin was better preserved at 45° than at 32° F. The texture Of the rind, however, and the texture and flavor Of the pulp were much better in the fruit held at 32° F. It is also associated with the curing of cheese, moth-proof storages for woollens and fun, and many other processes. In fact, the term cold storage involves so much nowadays that a large volume would have to be written in order to explain its whole meaning, and its various applications and uses. I wish to em hasize, however, that cold air alone is not cold storage in all cases. It most instances of storage it is very essential that the cold air be very pure and sweet, of the proper humidity or degree of mois ture, and it should circulate freely throughout the storage chambers. And ventilation, or the renewal of the air in the storages, should be well provided for, especially where large quantities of various classes of goods are stored for any length of time. Cold storage. Then, involves means of controlling not only the temperature, but the humidity. Purity, ciren lotion and ventilation of the air within the storage rooms. The degree of these factors varies to a certain extent for the different products and conditions of storage, but cold storage proper always involves them all.
