Book Food Safety Management

Download or read book Food Safety Management written by Veslemøy Andersen and published by Academic Press. This book was released on 2023-03-28 with total page 1160 pages. Available in PDF, EPUB and Kindle. Book excerpt: Food Safety Management: A Practical Guide for the Food Industry, Second Edition continues to present a comprehensive, integrated and practical approach to the management of food safety throughout the production chain. While many books address specific aspects of food safety, no other book guides you through the various risks associated with each sector of the production process or alerts you to the measures needed to mitigate those risks. This new edition provides practical examples of incidents and their root causes, highlighting pitfalls in food safety management and providing key insights into different means for avoiding them. Each section addresses its subject in terms of relevance and application to food safety and, where applicable, spoilage. The book covers all types of risks (e.g., microbial, chemical, physical) associated with each step of the food chain, making it an ideal resource. Addresses risks and controls at various stages of the food supply chain based on food type, including a generic HACCP study and new information on FSMA Covers the latest emerging technologies for ensuring food safety Includes observations on what works and what doesn't on issues in food safety management Provides practical guidelines for the implementation of elements of the food safety assurance system Explains the role of different stakeholders of the food supply

Book Food Safety Management

Download or read book Food Safety Management written by Gisela Kopper and published by Elsevier Inc. Chapters. This book was released on 2013-11-01 with total page 1192 pages. Available in PDF, EPUB and Kindle. Book excerpt: Biological agents, bacteria, viruses and parasites can, directly or indirectly, contaminate food. Similarly chemicals such as veterinary drugs used to combat animal illnesses, mycotoxins particularly aflatoxins, pesticides and environmental contaminants (e.g. dioxins, heavy metals) in animal feeds can also be a source contamination of food. Contamination of agricultural, animal and fish products is the result of the presence of human pathogenic bacteria and/or toxic substances, which can contaminate products in any part of the production chain. Examples are of the presence of a wide range of pathogens such as Salmonella spp., pathogenic Escherichia coli and Shigella, hepatitis A virus on fresh fruits and vegetables, E. coli O157:H7 in meats, Campylobacter spp., Brucella spp. in milk, Vibrio sp. and ciguatera toxin in fish. Thus the importance of good practices at the primary production level to prevent diseases and infections in animals, minimize risk of transmission to humans and/or contamination of food as well as to ensure animal health and welfare. The authors address three main primary production systems and the challenges to reduce the safety threats inherent to each. Good animal farming, fish health and good agricultural practices are described extensively so as to provide a clear picture of the complexity of the food production chains and the many factors that need to be under control to ensure the safety of food products.

Topics include lung disease in farmers, respiratory effects of long-term exposure to grain dust and air contaminants, respiratory hazards of pork producers, occupational asthma, allergic disorders in plant growers, allergic rhinitis in farmers, respiratory effects of inhaled endotoxins, organic dust toxic syndrome, cancer risks, hazards of pesticides, neurological risks, work-related accidents, prevention and safe practice, sustainable farming systems, and more. In all cases, the issues are broadly integrated with those of the environment. No other book presents such a broad perspective of the field.

Book Construction Safety Planning

Download or read book Construction Safety Planning written by David V. MacCollum and published by John Wiley & Sons. This book was released on 1995-06-16 with total page 502 pages. Available in PDF, EPUB and Kindle. Book excerpt: Construction Safety Planning David V. MacCollum Construction Safety Planning is a comprehensive, practical, step-by-step guide for those who design and oversee large and small projects. Designed to facilitate compliance with new OSHA objectives, it presents, for those who are responsible for construction safety, what questions to ask in order to avoid conditions that invite injury or death on site. The book shows how to integrate safety planning into existing design and construction scheduling in order to avoid duplicating paperwork that is normally associated with safety planning. Advice is given on how to involve all supervisory personnel as hazard hunters, so that timely prevention measures can be taken. Author David V. MacCollum is a forty-five-year veteran safety engineer who participated in the development of safety planning concepts used by the U.S. Army Corps of Engineers on big dam projects in the Pacific Northwest during the 1950s. In this clearly written reference he highlights the concepts and practices that reduced construction deaths by 75 percent and are today still enabling the Corps of Engineers to enjoy the same reduction nationwide, when compared to similar work not under its supervision--the end result being savings of several billion dollars each year. The risk of death on the job for construction workers is five times greater than that of the average American worker. A new OSHA era will change that. With this book, everyone working in the field of construction--from design to maintenance--will have the tools and knowledge to make a difference.
