Book excerpt: Purpose - The purpose of this paper is to examine the key risk components (probability and consequence) and their respective thresholds affecting agri-food supply chain operations in Malaysia. In addition, it seeks to understand the relationship between the major risk sources and to fathom the risk/disruption impact on agri-food supply chain performance in Malaysia. Design/methodology/approach - Cross-sectional survey data were collected using a structured questionnaire. The risks threshold associated with agri-food supply chain were categorized using the risk matrix scale and classification described in the Project Management Body of Knowledge (Project Management Institute, 2013). Next, the Pearson correlation was used to understand the relationship between the various risks and agri-food chain performance. Lastly, to investigate how firms' supply chain operations have been affected by risks/disruptions, an ordinary least square regression model was employed to quantify the impact of some major risk sources on agri-food chain performance in Malaysia. Findings - The results in this paper show variations in risks' probability, impact and threshold in agri-food supply chain. While risk sources such as periodic change in interest/exchange rate policies and volatility in customer demand are high-rated risks, uncertain land policies/tenure and poor quality control are low rated risks in the operations of the chain. The performance of the agri-food chain significantly but negatively correlates with all the major risks studied. Whereas demand, supply, weather, logistics/infrastructure and financial risk sources significantly undermined the chain's performance, risks emerging from biological/ environmental, management/operational, policy/regulations and political-related issues insignificantly affect the performance of agri-food supply chain in Malaysia. Research limitations/implications - This research is an area biased. However, some insightful managerial implications can be drawn from this paper to manage agri-food chain operations in a similar unstable environment. The result implies that risks are inevitable in agri-food chain but they differ in terms of menace to the chain's operation. Therefore, tomanage agri-food supply chain risks effectively, managers should periodically identify, quantify and categorize risk sources before making risk response decisions. In addition, the results show that risks account for about half of the overall agri-food chain performance in Malaysia. This infers that managers/ practitioners could improve the performance of the agri-food chain if limited resources are allocated to plan and effectively respond to major risks sources (such as demand, supply, finance, weather and logistical/ infrastructural services-related risks) undermining the performance of the chain. Originality/value - This research contributes to the agri-food chain risk literature and provides managers/ practitioners with empirical evidence of risk thresholds and their corresponding major impact on agri-food chain's performance. Since risks explained about half of agri-food chain performance in Malaysia, this research would prompt decision makers to improve on their risk assessment and responds (e.g. by employing efficient demand, supply and weather forecasting systems, logistic/infrastructure services, hedge to finance, etc.) to improve the chain's performance.

The chapters not only present new findings but also point to important directions for future research.

In this scenario, the routes to achieve resilient agrifood systems are numerous and include reducing agriculture's dependence on energy, energy-intensive imports and raw material imports. Resilience also requires diversified import sources and market outlets through sound multilateral and bilateral trade policy.

It also provides some historical context, along with the types of solutions available to the food industry, and the benefits associated with better recordkeeping that go beyond the public good and impact the bottom line. Whenever a food related outbreak occurs, traceability is called into question. When lives are at stake, it is critical that the root of the problem is quickly identified to prevent further illness. Once the problem is found, it’s just as important to contain it quickly. Too often, recalls expand because implicated product is not readily accounted for. Mention of traceability stirs fear for many in the food industry for several reasons: within a company, it’s not clear if responsibility for traceability lies with food safety professionals involved in recalls, supply chain professionals who understand product movement, IT professionals who build and maintain the recordkeeping systems, or regulatory professionals who need to respond to government requests for information. There is also a sense that traceability is someone else’s problem. Few firms admit that they are the weak link and instead tout how quickly they can perform mock recalls. But traceability is about more than just recalls. It is about the connectivity of the supply chain as a product and its constituents travel from the farm to the consumer. Because it is a systems issue, there is a sense that the investment by a single firm will be meaningless if supply chain partners don’t have comparable abilities. This book will address both these surrounding issues and solutions.

These risks have to be managed to avoid undesired consequences for individual firms in food supply chains and for society and the economy at large. As the nature and consequences of risk evolve over time, risk management reflects a continuous adaptive process. For any organization within a food supply chain - whether a large corporation, a government institution, or a family farm - this process needs to be integrated into their decision making procedures to rationalize choice in an uncertain world. This course provides a theoretical basis as well as practical experience on how risk needs to be accounted for within the decision making process. By means of lectures students will become familiar with the concept of rational choice and the theoretical principles of probability and risk preferences as well as methods to include risk within evaluations of decision alternatives. Students will apply these concepts and techniques by constructing their own decision support models during computer practicals. By various exercises, students will explore how the use of models improves the decision making process by structuring the decision problem, incorporating subjective probabilities as a way to portray risk, measuring outcomes in a way consistent with attitudes towards risk and understanding the value of information. During a concluding case study, students will act as assessors of risks from the perspective of the various stakeholders within a food supply chain (e.g. farmers, wholesalers, processors, distributors, retailers). Given a specified decision problem (viz. how to control a bacterial contamination within the chain), students will have to evaluate alternative options on behalf of the concerned stakeholders.
