Book excerpt: Rice is one of the principal cereals used by the world's inhabitants. The hope for improved nourishment of the world's population depends on the development of better rice varieties and improved methods for rice production and utilization. During the past four decades, interest in rice research and production has increased in many countries. The development of new and better varieties by the International Rice Research Institute in the Philippines and other rice research institutes has stimulated numerous research stations to test the performance of these varieties in many countries under different climates, soil properties, cultural practices, and environmental conditions. The methods of harvesting, handling, drying, and milling rough rice have improved as a result of research efforts by the engineers and the rice milling industries. The first edition of Rice: Production and Utilization was published in 1980. This second edition presents the recent developments and progress made by the researchers, the industries, and various experiment stations. Because of the large amounts of literature available in recent years on rice production and utilization, this edition is divided into two volumes, Volume 1: Production and Volume II: Utilization. It is hoped that the books will be useful to rice researchers, processors, and people interested in rice production and utilization. Those studying v vi PREFACE the agronomy of rice plants, especially the genetics, breeding, cultivation, diseases, and insects that attack both the rice plant and the stored grain, will find this edition helpful in their search for new knowledge.

Proteins can account for up to 40% of the dry weight of various types of seeds, thereby making a large contribution to the nutritional quality and processing properties of seeds. It is, therefore, not surprising that seed proteins were among the first plant components to be systematically studied, some 250 years ago, and have been a major focus of research over the past 100 years. The properties and behaviour of seed proteins pervade modem life in numerous ways. For example, legume and cereal proteins are used'in the production of a wide range of meat-free foods; the process of bread-making is dep~ndent on the physical chemical properties of wheat seed proteins; and in developed, as well as developing, countries, nutritional deficiencies among vegetarian diets are avoided through balancing legume and cereal seeds as sources of dietary proteins. Understanding seed proteins, in order to improve their composition and properties and to increase their concentrations, will thus continue to be an important research objective for the future. The present volume represents the culmination of a long-discussed plan of the editors, to bring together the best international authorities in order to compile a definitive monograph on biological, biochemical, molecular and genetic aspects of seed proteins.

This book is largely devoted to the applications of genetic markers that have been developed by the application of molecular genetics to practical problems. These are known as DNA markers. They have gained a certain notoriety in foren sics, but can be used in a variety of practical situations. We are going through a period of accelerated breakthroughs in molecular ge netics. Therefore, the authors of each chapter were encouraged to speculate about both current bottlenecks and the future of their subfields of research. We can cer tainly apply molecular genetic tools and approaches to help resolve crucial ge netic resource problems that face humanity. However, little has been discussed with respect to when or how we should use such tools, nor to who specifically should use them; therefore, social and economic analyses are important in the planning stages of projects that are aimed at practical results.
