The latter is believed, with our new vineyards, comparatively new varieties, and general want of knowledge and experience on the sub ject, to be practically impossible, and that it may therefore be accepted as a general rule that it is better to devote all possible energy to the production of good, healthy table wines for the present, and wait for the larger experience this will afford and the accession of new varieties to lead to the production of wines of higher grades.
