A breathable and stable atmosphere ?rst appeared about 500 million years ago. Oxygen levels are not stable in aquatic environments and exclusively water-breathing ?sh must still cope with the ever-changing levels of O 2 and with large temperature changes. This is re?ected in their sophisticated count- current systems, with high O extraction and internal and external O receptors. 2 2 The conquest for the terrestrial environment took place in the late Devonian period (355–359 million years ago), and recent discoveries portray the gradual transitional evolution of land vertebrates. The oxygen-rich and relatively stable atmospheric conditionsimpliedthatoxygen-sensingmechanismswererelativelysimpleandl- gain compared with acid–base regulation. Recently, physiology has expanded into related ?elds such as biochemistry, molecular biology, morphology and anatomy. In the light of the work in these ?elds, the introduction of DNA-based cladograms, which can be used to evaluate the likelihood of land vertebrates and lung?sh as a sister group, could explain why their cardio-respiratory control systems are similar. The diffusing capacity of a duck lung is 40 times higher than that of a toad or lung?sh. Certainly, some animals have evolved to rich high-performance levels.

Book excerpt: Amino acids (AAs) are not only building blocks of protein, but are also signalling molecules as well as regulators of gene expression and the protein phosphorylation cascade. Additionally, AAs are key precursors for syntheses of hormones and low-molecular weight nitrogenous substances with each having enormous biological importance. For example, physiological concentrations of AA metabolites (e.g., nitric oxide, polyamines, glutathione, taurine, thyroid hormones, and serotonin) are required for cell functions. Growing evidence shows that humans and animals have dietary requirements for all proteinogenic AAs. Mammals, birds and fish also have species- and age-dependent needs for some AA-related substances. However, elevated levels of other products (e.g., ammonia, homocysteine, H2S, and asymmetric dimethylarginine) are pathogenic factors for neurological disorders, oxidative stress, and cardiovascular disease. Thus, optimal amounts of AAs and their ratios in diets and circulation are crucial for whole body homeostasis and health. Adequate provision of one or a mixture of functional AAs or metabolites may be beneficial for ameliorating health problems at various stages of the life cycle (e.g., fetal growth restriction, neonatal morbidity and mortality, weaning-associated intestinal dysfunction and wasting syndrome, obesity, diabetes, cardiovascular disease, the metabolic syndrome, and infertility). Dietary supplementation of these nutrients can also optimize the efficiency of metabolic transformations to enhance muscle growth, milk production, and athletic performance, while preventing excess fat deposition and reducing adiposity. Therefore, functional AAs hold great promise in improving the growth, health and well-being of individuals. Book excerpt: Although aquaculture as a biological production system has a long history, systematic and efficient breeding programs to improve economically important traits in the farmed species have rarely been utilized until recently, except for salmonid species. This means that the majority of aquaculture production (more than 90 %) is based on genetically unimproved stocks. In farm animals the situation is vastly different: practically no terrestrial farm production is based on genetically unimproved and undomesticated populations. This difference between aquaculture and livestock production is in spite of the fact that the basic elements of breeding theory are the same for fish and shellfish as for farm animals. One possible reason for the difference is the complexity of reproductive biology in aquatic species, and special consideration needs to be taken in the design of breeding plans for these species. Since 1971 AKVAFORSK, has continuously carried out large scale breeding research projects with salmonid species, and during the latest 15 years also with a number of fresh water and marine species. Results from this work and the results from other institutions around the world have brought forward considerable knowledge, which make the development of efficient breeding programs feasible. The genetic improvement obtained in selection programs for fish and shellfish is remarkable and much higher than what has been achieved in terrestrial farm animals.
