Book Wheat Structure

Download or read book Wheat Structure written by J D Schofield and published by Elsevier. This book was released on 1996-01-01 with total page 392 pages. Available in PDF, EPUB and Kindle. Book excerpt: Understanding the structural, compositional and physicochemical properties of the wheat used in bread, biscuits, pasta and other consumer products is important. This book brings together international experts to provide an overview of the progress made to date and also to give an insight into the new approaches that can be used to solve outstanding problems. It covers progress in areas including: what grain structure; structural features of the gluten proteins; structual-functionality relationships of wheat protein; lipid-binding proteins; rheology of dough systems; and the importance of non-starch polysaccharides.

Download or read book Wheat written by W. Bushuk and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 252 pages. Available in PDF, EPUB and Kindle. Book excerpt: Wheat provides over 20% of the calories for the world population of 5. 3 billion persons. It is widely grown in five of the six continents. It is a highly versatile food product in that it can be stored safely for long periods of time and transported in bulk over long distances. In relative terms, it is reasonably priced; over the past quarter century, the inflation-adjusted price of wheat has been declining. Modern milling and baking technology required for the transformation of wheat grain into consumable baked products is available or accessible in all countries of the world. For these reasons, and because Canada is one of world's leading wheat producing countries, it seemed appropriate to include a major symposium on wheat in the scientific and technical program of the 8th World Congress of Food Science and Technology held in Toronto, Canada during September 29-0ctober 4, 1992. In selecting the topics for the symposium on wheat, we attempted to cover a full range of subjects including economics and marketing, nutrition, grading, processing, constituent chemistry and functionality, biote- nology, and safety of genetically modified wheat varieties. The major focus was on common hard (bread) wheats; separate papers were devoted to the unique characteristics and technological properties of common soft (biscuit) and durum (pasta) wheats. Each paper was presented by an acknowledged international expert. This book provides a more permanent record of the papers presented at the symposium.

Book Gene Manipulation in Plant Improvement II

Download or read book Gene Manipulation in Plant Improvement II written by J. Perry Gustafson and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 436 pages. Available in PDF, EPUB and Kindle. Book excerpt: There are clearly many directions in which the further development of the GUS gene fusion system can progress. Some of these have been outlined above, but others can be imagined. There are no reasons to limit our conceptions of the use of GUS gene fusions to analysis and manipulation of single genes. We can envision numerous marked genes - perhaps with several new fusion systems - giving valuable information about gene interaction, or population structure. The study of plan- pathogen and plant symbiont interactions can progress rapidly with simple quantitative markers for genes and individuals. We can imagine ways of using gene fusions to report on crop physiology or other complex phenotypes, thereby enhancing the accuracy and speed of screening. Introduction of the biosynthetic pathway for glucuronide detoxification by expressing genes for the UDP-glucuronyl transferases in plants may result in novel mechanisms for plants to deal with xenobiotics such as insecticides or herbicides. Synthesis of substrates, which until now has been performed chemicall- resulting in expensive compounds - can be done biosynthetically. This should make the system not only the most powerful gene fusion system for agriculture, but also the most accessible.

Book Wheat Landraces

Download or read book Wheat Landraces written by Nusret Zencirci and published by Springer Nature. This book was released on 2021-09-15 with total page 268 pages. Available in PDF, EPUB and Kindle. Book excerpt: Landraces possess a very large genetic base in population structure and are dynamic populations of cultivated plants with historical origin, distinct identity, and without any formal crop improvement. They are often genetically diverse, locally adapted, and associated with traditional farming systems. Resistance genes to biotic and abiotic stress factors, which are especially diversified in landraces, are of great interest to plant breeders, faced with global climate challenge. In addition, gene pools made of different landraces grown in different ecological conditions can be used for wheat breeding to enhance quality; yield and other desirable agricultural parameters. An estimated 75% of the genetic diversity of crop plants was lost in the last century due to the replacement of high yielding modern varieties. There is, thus, an urgent need to preserve existing species, not only for posterity but also as a means to secure food supply for a rising world population. In this book, we provide an overview of wheat landraces with special attention to genetic diversities, conservation, and utilization.
