Book excerpt: If there is a frontier beyond organic, local, and seasonal, beyond farmers' markets and sustainably raised meat, it surely includes hunting, fishing, and foraging your own food. A lifelong angler and forager who became a hunter late in life, Hank Shaw has chronicled his passion for hunting and gathering in his widely read blog, Hunter Angler Gardener Cook, which has developed an avid following among outdoor people and foodies alike. Hank is dedicated to finding a place on the table for the myriad overlooked and underutilized wild foods that are there for the taking—if you know how to get them. In Hunt, Gather, Cook, he shares his experiences both in the field and the kitchen, as well as his extensive knowledge of North America's edible flora and fauna. With the fresh, clever prose that brings so many readers to his blog, Hank provides a user-friendly, food-oriented introduction to tracking down everything from sassafras to striped bass to snowshoe hares. He then provides innovative ways to prepare wild foods that go far beyond typical campfire cuisine: homemade root beer, cured wild boar loin, boneless tempura shad, Sardinian hare stew—even pasta made with handmade acorn flour. For anyone ready to take a more active role in determining what they feed themselves and their families, Hunt, Gather, Cook offers an entertaining and delicious introduction to harvesting the bounty of wild foods to be found in every part of the country.

Book Game Meat Hygiene in Focus

  • Author : P. Paulsen
  • Publisher : Springer Science & Business Media
  • Release : 2011-09-15
  • ISBN : 9086867235
  • Pages : 332 pages

Download or read book Game Meat Hygiene in Focus written by P. Paulsen and published by Springer Science & Business Media. This book was released on 2011-09-15 with total page 332 pages. Available in PDF, EPUB and Kindle. Book excerpt: Game meat is consumed world-wide. In most regions, it contributes only a small part to the overall meat and food supply, but for reasons of animal welfare and sustainability it is sometimes considered an alternative to meat from farmed animals. Despite differences in game species, ante mortem conditions (free-range or fenced; wild or semi-domesticated), hunting or harvesting procedures and further handling of the carcass, there are common requirements as regards meat safety and quality. Whereas meat hygiene and safety have been an issue in game meat for export/import for a long time, primary production, domestic supply and direct supply to the consumer have recently been addressed by legislation and these sectors still present unresolved questions and challenges. This book combines 24 contributions presenting the view of experts in game meat hygiene and quality. They address four main topics: i.e. 'hygiene and microbiology', 'epidemiology', 'risk assessment and management' and 'muscle biology and meat quality'. In addition to contributions on this topic by authors from eight European countries, a South African perspective is provided, thus representing the standpoint of a major game meat exporter. This volume is the first in a series on safety and quality assurance along the game meat chain, following a 'from forest to fork' approach and is targeted at scientists in academia and industry, graduate students as well as at governmental officials in veterinary public health and food safety.

Book Poultry Game

    Book Details:
  • Author : Ian McAndrew
  • Publisher : Springer Science & Business Media
  • Release : 2012-12-06
  • ISBN : 1461314798
  • Pages : 232 pages

Download or read book Poultry Game written by Ian McAndrew and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 232 pages. Available in PDF, EPUB and Kindle. Book excerpt: Poultry, but more especially game, is a subject close to my heart. Why? Wellfor the last eight years or so I have been, and indeed still am, a keen shooting man. Shooting for sport, I know, is a subject many people find disagreeable, and the an- bloodsports league is a powerful lobby. Nevertheless, it is a pastime that is becoming more and more popular as years go by and one I hope to continue enjoyingfor many years to come. Without it not only would a part of our history and culture be lost, but our wildlife would become threatened, wildlife and habitat conservancy a thing of the past, and the countryside turned into even greater areas of wheat and rape deserts. No one would know the pleasures of the first woodcock or the first English partridge of the season. Imagine a cold winter's morning: a thin covering of snow, the grey skies heavy with more, ready to discharge their cargo without notice. Pick up the gun, call the dogs and set out across the fields. Silence prevails. In the distance, a handful of pigeons are heading this way. Crouching in the hedgerow I wait for them to come within range. Pigeon terrine, pigeon salad with a few toasted kernels, all the menu ideas running through my head, but to no avail, I've been spotted. Truffle and Bella (my dogs) are worrying a patch of brambles, not too keen on going in. Bella scrambles in, belly flat to the ground.

Book The Hunter s Haunch

Download or read book The Hunter s Haunch written by Paula Young Lee and published by Simon and Schuster. This book was released on 2014-09-16 with total page 165 pages. Available in PDF, EPUB and Kindle. Book excerpt: A new way to look at hunting and deer meat that anyone who owns a venison cookbook must read! Is a doe better eating than a buck? Is hanging really necessary? Why can’t venison be aged? Will soaking in milk make that gamy taste go away? The Hunter’s Haunch provides straightforward and fascinating answers for these and other questions that every hunter-cook has faced, delving into myths, folklore, hunting history, and modern culinary science in order to explain why certain techniques still work and others don’t. Many wild game cookbooks offer recipes for venison chili, venison burgers, venison sausage, and other solutions that make tough and gamy meat edible. By contrast, The Hunter’s Haunch aims to rethink the entire process so that rescuing tough meat never becomes necessary in the first place. Focusing on the relationship of the hunt to the rhythms of nature, The Hunter’s Haunch examines the deer as a living creature in the wild, showing how the skills of the hunter affect its treatment in the kitchen, and ultimately how the venison tastes when served at the table. Covering the history of deer hunting, practical lessons in game anatomy, and indispensable tips for dressing and prep, The Hunter’s Haunch is an essential read for anyone who hopes to transform their quarry into the best possible venison. Skyhorse Publishing is proud to publish a broad range of books for hunters and firearms enthusiasts.
