Me he ocupado de esta cultura de la vid y el vino en la D.O. Toro en un estudio etnograficolingüístico titulado precisamente La cultura de la vid y el vino en Toro (en prensa en el momento de redactar estas líneas), del que este Léxico vitivinícola tradicional de la D.O. Toro constituye un complemento. En aquel trabajo describo los usos y costumbres vitivinícolas de la D.O. Toro, y recojo casi 3000 unidades léxicas asociadas a ellos, con sus correspondientes adscripciones geográfico-históricas, pero por razones de carácter práctico, y, en concreto, para no hacer aún más extensa de lo que ya es aquella publicación, no incluyo las documentaciones que justifican la filiación geográfico-histórica establecida para cada unidad. En este Léxico vitivinícola tradicional de la D.O. Toro se presentan aquellas mismas 3000 unidades léxicas, con su significado, localidades de la D.O. Toro en que se usan, así como con sus respectivas adscripciones geográfico-históricas, pero añadiendo, además, las documentaciones en que se basan dichas adscripciones; el propósito es que el lector de la La cultura de la vid y el vino en Toro que quiera profundizar en pormenores filológicos que faltan en esta obra pueda hacerlo en el Léxico vitivinícola tradicional de la D.O. Toro, y también que quien esté interesado únicamente en los aspectos léxicos, pero no en los etnográficos, pueda igualmente acceder a esta información sin tener que considerar contenidos ajenos a su interés.

Book excerpt: Esta obra caracteriza el universo de las bodegas de vinos de la Comunidad Autónoma de Castilla y León acogidas a las Denominaciones de Origen Protegidas (DOP) mediante el Análisis Estadístico Multivariante de los datos. Esta novedosa aproximación al tema, a partir de una ingente cantidad de información obtenida y procesada desde el año 2009, constituye la aportación metodológica más significativa de este estudio. El perfil multifactorial de las bodegas obtenido de este modo, además, es comparado con la tipología de los Mundos de Producción definida por Salais y Storper en 1992. Desde esta perspectiva, se identifican tres clúster o conglomerados de bodegas con características semejantes y diferenciadoras. Por un lado, las bodegas de mayor tamaño y antigüedad, que elaboran una amplia gama de vinos y pertenecerían al mundo de producción industrial. Por otro, las bodegas pequeñas, jóvenes y especializadas en la elaboración de tintos en series cortas, integrantes del mundo de producción interpersonal. Y finalmente, las bodegas elaboradoras de vinos blancos, que conformarían el mundo de producción de nichos de mercado. Aunque la correspondencia con la tipología original no es completa, el marco analítico y la metodología estadística multivariante se muestran capaces de identificar las principales combinaciones de recursos y productos desarrolladas en sectores industriales como el de la elaboración de vinos, muy ligados al territorio y a factores productivos como los recursos naturales, cuya movilidad espacial es nula o muy limitada. Todo ello configura esta propuesta teórico-metodológica, que puede ser aplicada a otras ramas de la industria agroalimentaria, y que permite interpretar la diversidad del sistema vitivinícola regional de calidad de Castilla y León.
