Book excerpt: Excerpt from Program and Abstracts of Papers, Citrus Research Conference: December 2, 1969 Naringin is the principal flavonoid constituent of grapefruit. Because of its extreme bitterness, naringin when present in excessive amounts is considered to be a prime factor in limiting the acceptance of grapefruit. The presence of naringin in grapefruit has been known for many years, and its physical and chemical characteristics have been well established, but the knowledge of the biosynthesis of naringin in grape fruit is very limited. Although a general working hypothesis for the pathway of naringin biosynthesis can be deduced from radiotracer studies of phenolic biosynthesis in other plants and from knowledge of the phe nolic constituents found in grapefruit, most of these steps have not been demonstrated in grapefruit. Even more important, the enzymes catalyzing each of these steps in the deduced pathway have not been demonstrated in grapefruit. Because our main objective is to learn what controls naringin production and accumulation in the fruit, studies have been undertaken to determine what enzymes are involved in the biosynthetic pathway, to meas ure the activities of the enzymes and to correlate their activities with the rate of naringin accumulation. Book excerpt: Excerpt from Program and Abstracts of Papers, Citrus Research Conference: February 5, 1957 Earlier attempts to fractionate the carotenoid polyols by means of counter current distribution, with solvent systems such as benzene, petroleum ether, and 752 methanol were unsuccessful due to the formation of very persistent emulsions. Jmore recent investigation of many other solvent systems led to the discovery of several in which the carotenoid.polyol fraction had a dis tribution coefficient of around 1 and in which emulsion formation was not a serious problem. The system consisting of petroleum ether, acetone, meth anol, and water (1.25'to l to to by volume) was considered the most satisfactory from.the standpoints of maximum fractionation of the carotenoid polls and minimum emulsion formation. In a loo-transfer run with this system using carotenoid polyols from orange juice, 3 major and 2 minor peaks were observed. Book excerpt: Excerpt from Program and Abstracts of Papers, Citrus Research Conference: December 5, 1972 On the basis of the present work, which represents a moderately broad sampling of fresh, unpasteurized juices, it may be concluded that (1) fresh lemon juices differ markedly in the nature of their particle size distributions and (2) broadening of particle size distributions evidently occurs with advancing fruit maturation. The properties of a commercial lemon juice concentrate were compared with averages obtained from a variety of fresh juices. The concentrate, as reconstituted with distilled, deionized water, had times the turbidity index of fresh juice. The volume of particles exceeding um effective diameter was about forty percent of the average for fresh juice. Modal particle diameter was about half that of the fresh juices, and the particle size distribution had a width - height ratio that was about three percent of the value for fresh juice from non-senescent lemons.
