Book excerpt: Excerpt from Beet-Root Sugar and Cultivation of the Beet The experience of Europe in the failure of their supply of cotton, caused by the late war, should teach the United States not to depend too exclusively upon foreign countries for her supply of so necessary an article as Sugar, of which the consumption is about 400,000 tons, while the production of all kinds within her borders is less than 50,000 tons; leaving 350,000 tons to be imported. In case of war with a great maritime power, like England or France, which would, in part at least, prevent importation, sugars would necessarily advance enormously. The emancipation of slaves in the only remaining strongholds of slavery - Cuba and Brazil (which is simply a question of a very few years) - would probably, at first, as it has always done elsewhere, diminish the production of sugar in those countries at least fifty per cent. If such should prove to be the case, as this production exceeds 600,000 tons, the diminution would make so serious an inroad upon the ordinary supplies of the world that prices would materially advance. However, potential output may have been affected. Alcohol production in is forecast at billion liters, compared with billion in Domestic consumption and exports of alcohol have slacked. Off, however, and this may result in a slowdown in the expansion program. In Argentina, the acreage of cane harvested is expected to drop in due to the lower prices that have prevailed. As a result, sugar production is forecast to be down. This appears to be one of the few places in the world where: that will be the case this year. In Peru, a sizable increase is projected as that country seeks to recover from the dry weather and other serious problems that have affected the industry in recent years. The culti 'al)le areas of Cuba. Java and Hawaii are but the smallest fraction of the total frost-free tillable areas of the globe. To enter fully into an explanation of why the cane sugar industry has attained ascendancy on these islands would be to trace the sociological and political upheavals that have affected the decline of cane sugar production, first in the countries around the Mediterranean, afterwards in Brazil, San Domingo. The British Indies and other districts where, to go back to early history, there w'ere promising cane sugar outlooks. It suffices for the present, however, to show that the survival of sugar production in Cuba, in Java, and in Hawaii is due to separate and distinct causes. There are, however, many things to indicate the industry's stability. Considering the whole country, climatic conditions have not been normal. Unfavorable weather occurred during the planting season in nearly all the different beet-growing areas. In some places there were excessive rains; in others the weather was too cold or too dry. In most of the States, Colorado particularly excepted, fairly favor able weather conditions existed during the growing season. There would, however, have been a larger planted and harvested area throughout the United States had it not been for the unfavorable weather conditions of the planting period. In' many places the yield and quality of beets were good. The total output of beets and sugar was reduced on account of the smaller area planted.
