Book excerpt: Abstract: Seven presentations focus on teenage and college-age diets. 35 research studies found that of four basic considerations in food choice--work, taste, expense, health--, nutrition (health) is seen by consumers as most important. Six major issues were identified as nutrition related: 1) general nutrition; 2) proteins, vitamins, and minerals; 3) carbohydrates; 4) nutrition labeling; 5) calories and weight control; 6) fats and cholesterol. Additives and food processing were major issues in technology-related categories. Fad diets for teenagers should be analyzed for basic nutritive value. Gynecologic age and pregravid weight should be part of nutritional screening to help modify adolescent diets. Diets for athletes should follow reasonable dietary principles for basic food allowances depending on physical factors and activity. Surveys of college students indicated that nutrition information does not change eating habits; a balanced approach of cognitive, affective, and behavioral strategies is proposed. Nutrition education can be effective if it is personalized, emphasizes personal responsibility, and involves school resources. National nutrition policy is discussed.
