Book excerpt: Excerpt from Present and Alternative Methods of Pricing Eggs Continual changes in the structure of the egg industry have resulted in increasing demands for improvement in present egg pricing methods or for alternatives to the present methods. In an effort to give producers, egg handlers, and students a better understanding of egg pricing and the problems associated with it, this report defines the egg pricing problem, explains how the present egg pricing system works, and presents alternative systems. The material presented in this report derives in large part from a survey of egg handlers conducted during 1962 and 1963. Book Pricing Eggs at Wholesale in Chicago and St Louis Classic Reprint

Download or read book Pricing Eggs at Wholesale in Chicago and St Louis Classic Reprint written by Norris Taylor Pritchard and published by Forgotten Books. This book was released on 2018-05 with total page 36 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Pricing Eggs at Wholesale in Chicago and St. Louis The structure of the Chicago egg market is complex and changing. At least two distinctly different systems of assembling, distributing, and pricing eggs are in compe tition. At one extreme are large corporate food chains with fully integrated egg market ing operations. They buy eggs from farmers on a grade-size basis at their country grading stations, where the eggs are cartoned for sale through their retail stores. Other chains buy cartoned eggs from independent country assemblers. Eggs purchased by the chains handling upwards of 40 percent of total egg receipts in Chicago are received largely from country points in consumer cartons. The chains rarely buy eggs from Chicago wholesalers and do not trade in eggs on the Chicago Mercantile Exchange. Several independent egg distributors also buy cartoned eggs from country shippers for resale to retail stores. Probably more than half of the estimated 5. 4 million cases of eggs received annually in the metropolitan area are received in consumer cartons direct from country points. The proportion of wholesale graded and ungraded eggs in 30 dozen cases has been declining. The integrated and partly integrated egg marketing firms generally follow an in formal, relatively flexible quotation pricing system in determining prices to country shippers. Both New York and Chicago egg quotations are used as base prices. Firms buying from farmers at the firms' own grading stations pay prevailing competitive prices in the vicinity of the stations. Book The Care of Market Eggs Classic Reprint

Download or read book The Care of Market Eggs Classic Reprint written by William Archibald Brown and published by Forgotten Books. This book was released on 2018-10 with total page 32 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from The Care of Market Eggs Eggs are a perishable food product. They do not improve with age and no amount of handling or manipulation will enhance their quality. The poor qua lity of the average market egg has been attributed by many persons to its retention in cold storage. This is an erroneous idea, for while the quality will not improve, yet if the eggs are full and fresh and sweet when placed in a well equipped and properly managed cold storage, there is not, during the time they are ordinarily held, sufficient change in quality to render them unfit for food. Marked improvement has been made in the methods of handling other kinds of food stuffs. The same old, antiquated methods of handling eggs that prevailed many years ago, prevail today. This bulletin is a preliminary attempt to analyse the situation and point out ways and means of improvement. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Care and Marketing of Eggs It has been pointed out repeatedly that the 'case - count' system of buying eggs has been largely the cause of the general unsatisfactory condition of the trade. For many years eggs have been purchased by number without regard to quality. This has been decidedly unfair to the farmers and other producers who have taken pains to market good. Clean. Fresh eggs, and through placing no premium on good eggs the system referred to has really become an incentive to the continu ance of careless and dilatory methods. It has made possible the disposal of eggs in all stages of decomposition. And has encouraged farmers and local buyers to hold eggs at certain seasons of the year when they have no satisfactory places for storing them. This whole subject has been thoroughly discussed at recent meetings of produce dealers. Of the Provinces of Ontario and Quebec. Officials from both the Federal and Ontario Departments of Agriculture were present at these meetings, and endeavoured strongly to present the imperative need of a radical change in the system of handling and marketing eggs. Book One Hundred Ways of Cooking Eggs Classic Reprint

Download or read book One Hundred Ways of Cooking Eggs Classic Reprint written by Alexander Filippini and published by Forgotten Books. This book was released on 2018-10-08 with total page 380 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from One Hundred Ways of Cooking Eggs Eggs are not fit for any purpose unless they are perfectly fresh. An easy method of ascertaining the freshness of an egg is to hold it toward the sun or toward a good light. If fresh, it will be perfectly clear; if it is clear on one side and cloudy on the other, it is stale. Another good test is to place the eggs in a pan filled with water; those that sink to the bottom are perfectly fresh; if they float at the top or stand on end in the water, they are unfit for use. Book excerpt: Excerpt from Egg Dainties: How to Cook Eggs in 150 Ways, English and Foreign IN many English households it is seldom that eggs appear at table in any other form than poached or boiled. Omelettes are considered luxuries, even if the cook can make them decently - which is not often the case - and few people seem to have heard of tortillas. The reason sometimes given is that eggs are expensive. So, in a sense, they are; yet, in another sense, they are cheap, for they form a perfect food, containing more real nutriment than anything else of the same bulk which can be obtained at the same price.
