El capítulo uno introduce al estudiante en los requisitos de calidad en alimentos desde el agua hasta productos procesados como lácteos, cárnicos, frutas y hortalizas, y sus correspondientes laboratorios. El capitulo dos relaciona los conceptos de propiedades fisicoquímicas de los alimentos y sus mediciones. De otro lado, los capitulos tres al cinco agrupan los conceptos de transferencia de movimiento (capítulo 3), calor (capítulo 4) y masa (capítulo 5) así como aplicaciones prácticas en operaciones unitarias de la industria de alimentos. Finalmente, el capitulo 6 muestra un caso de estudio de operaciones unitarias con tratamiento de sólidos para el proceso de preparación de la bebida de café. El presente texto es pues una guia para que el estudiante complemente su conocimiento desde los inicios hasta el final de su linea ingenieril, así como, un resumen práctico para el futuro ingeniero de alimentos.
