Book excerpt: Excerpt from Prepackaging Early California Potatoes at Point of Production In 1959, comparative costs of material, labor, and transportation were determined and 10 test shipments of potatoes packed in paper and polyethylene bags were made. Time studies were conducted in three potato packing plants to determine the amount of labor required for packing and carloading lo-pound paper bags. None of these plants commercially packed polyethylene bags. The polyethylene bags used for these experiments were packed on the same lines as the paper bags, but were closed and packed into master baler bags (five lo-pound bags in each master baler) by the research workers. The paper-and-mesh-window bags are not customarily packed in master bags because the packers believe that the heavy paper of the consumer bags gives adequate protection and do not con sider the additional expense of baler bags necessary. In order to compare the direct labor required for the paper bags and the polyethylene bags, standard times accumulated for the paper bags were projected to equivalent operations t fill, handle, and load the polyethylene bags. Four grower-shippers cooperated in originating 10 controlled railroad tests. The test packages were shipped between May 28 and June 12 to seven terminal markets. To compare the amount of weight loss in transit, research workers weighed the filled paper and polyethylene bags before shipment and reweighed them upon arrival in the terminal markets. Book excerpt: Excerpt from Growing and Handling Sweet Potatoes in California The term seed as applied to sweet potatoes is a misnomer, just as in the case of Irish potatoes. True seed, developing from flowers and fruit, is seldom seen in the United States, although it has been known to form in southern Florida. Occasionally sweet potatoes bloom in southern California, but seed is rarely formed. However, seed has such a universal meaning among growers that it will be used in this discussion to mean the enlarged portions o-f the root, commonly known as sweet potatoes. Probably one of the limiting factors in the production of a profitable crop of sweet potatoes is the inability to secure good seed in those states where seed certification is not prao ticed. In California neither the demand for certified seed nor the acreage grown at present seems to justify certification. With pro-per precautions it is possible for the grower to select high quality seed from his own fields. The sweet potato itself consists of a root, originally a fibrous feeding root, which in the process of development has thickened for a greater or less distance from the central stem. On each such thickened root, or potato, are found four rows of lateral fibrous feeding roots, which usually disappear before the crop is mature, leaving only slight depressions where they were attached. Fro-m the neighborhood of the root scars, adventitious buds originate and under favorable growing conditions, sprouts are formed. These sprouts have an independent root system and are only weakly connected with the mother potato, fro-m which, however, they derive most of their nourishment. Until they are separated and set. In the Open field. The sweet potato has no true rest period, for the sprouts may start growing at any time under suitable moisture and temperature conditions and often do so in the field when harvesting is delayed and in the storage house in the later part of the storage season. The reason for presenting the figures for each year rather than the average annual production of these several States is to bring out the marked increase in production in 1917, following the short crop and consequent high prices which prevailed for late potatoes in the autumn and winter of 1916 and the spring of 1917. The State of Virginia shows the greatest increase. The production of potatoes in Virginia in 1914 was bushels, but in 1917 it was estimated at bushels, an increase of approximately 172 per cent. Other States show a larger percentage of increase, but not so great an aggregate quantity. This emphasizes one of the great possibilities of the southern potato-production territory in connection with. The food supply of the Nation. When there is a definite shortage of potatoes at the close of the storage season in the North in any particular year, it is perfectly feasible, as was demonstrated in 1917, to increase the acreage of the southern crop to such an extent as to make good in large measure any shortage in the total production which may be required. The wilt fungus frequently appears on them as a white or pink mold, and when the underground portion of the stem is cut across a pronounced brown discoloration is visible. This brown stain is also found in the branches leading to the tubers, and a thin slice across the stem end of the tuber will often reveal its presence there as well. Examination of thin sections of these browned stems under the microscope shows the fungus to be abundant in the water-carrying vessels of both underground stems and roots; where it appears as delicate, colorless threads, bearing tiny elliptical spores. The yield from diseased hills is greatly diminished, particularly if the attack begins early in the Season. This need of care is because of the fact that a very few Wormy potatoes may infect in a few weeks a whole storeroom full of what were originally clear tubers. As the potato is a food product that is expected to retain its value for many months, this possibility of infestation becomes a most serious question. Certain rots, particularly that produced by a species of Penicillium follow the work of the worm, starting in the burrow filled with excrement and ultimately involving the whole tuber. Potatoes for the Philippine and Hawaiian trade require very careful culling before shipping, because the warm, moist conditions on the voyage into the tropics favor both the insect and the fungus, a single infested potato often spoiling a whole crate. Some 50-pound and 10-pound bags are also used but it is estimated that over 90 percent of these California potatoes are customarily shipped in 100-pound burlap bags. Since 1956, more shippers have been packing or are interested in packing potatoes in the new 50-pound box. As a result, there has arisen a need to analyze the advantages and disadvantages of the new 50-pound box with respect to container and material costs, labor require ments, arrival condition, and trade acceptance. It is estimated that in 1957 the equivalent of about 150 cars of California White Rose potatoes were packed and shipped in 50-pound fiberboard boxes.
