Book excerpt: Toxicology: Oxidative Stress and Dietary Antioxidants examines the nature of oxidative stress as a consequence of exposure to toxins and how antioxidant approaches can mitigate the impact of toxicant exposures. Sections covers the basic biology of oxidative stress, from molecular biology, to physiological pathology, mechanisms of action of specific toxicants, metals and other chemicals/drugs, and antioxidant approaches and therapies for toxic exposures. With contributions from an international group of experts, useful summary sections, a dictionary of terms, and applications to other areas of toxicology, this book is an informative, consolidated reference that helps bridge the interrelationship between toxicology, oxidative stress and antioxidants. - Provides a novel collection of information linking both sides of redox biology (oxidants and antioxidants) and toxicology - Explores the role of free radical mediated damage and toxicology - Contains contributions from experts on toxicological science surrounding oxidative stress and on antioxidant approaches for reducing the impact of toxicant exposures

Book Antioxidants in Therapy and Preventive Medicine

Download or read book Antioxidants in Therapy and Preventive Medicine written by Ingrid Emerit and published by Springer Science & Business Media. This book was released on 2012-12-06 with total page 585 pages. Available in PDF, EPUB and Kindle. Book excerpt: Twenty years ago, the enzyme superoxide dismutase which uses the superoxide radical anion as its specific substrate was reported. With this discovery was born a new scientific field, in which oxygen, necessary for aerobi c 1 ife on thi s planet, had to be cons i dered also in terms of its toxicity and stresses. This stimulated the search for knowledge of active oxygen species in biology and medicine. Superoxide and other reactive oxygen species are now implicated in many disease processes. Major advances have been achieved during these past years with respect to free radical generation and mechanisms of free radical action in causing tissue injury. In parallel, the possibil ity of influencing free radical related disease processes by antioxidant treatment was studied in various in vitro and in vivo systems. This was the unique theme of a conference organized in Paris by the Society for Free Radical Research (December 9-10, 1988) which brought together experts from basic sciences and clinicians in order to evaluate the current status of antioxidant therapy. The conference emphasized fundamental processes in antioxidant action. Among the major topics were superoxide dismutase (SOD) and low molecular weight substances with such activity, called SOD mimics. Other antioxidant enzymes were also considered. Antioxidant vitamins, in particular vitamins E and C, other naturally occurri ng antioxidants and vari ous synthet i c antioxidants were included in the presentations as there is now a rapidly developing series of compounds with potentially interesting clinical applications.

Book Antioxidants in Science Technology Medicine and Nutrition

Download or read book Antioxidants in Science Technology Medicine and Nutrition written by G. Scott and published by Elsevier. This book was released on 1997-05-01 with total page 348 pages. Available in PDF, EPUB and Kindle. Book excerpt: The use of antioxidants is widespread throughout the rubber, plastics, food, oil and pharmaceutical industries. This book brings together information generated from research in quite separate fields of biochemical science and technology, and integrates it on a basis of the common mechanisms of peroxidation and antioxidant action. It applies present knowledge of antioxidants to our understanding of their role in preventing and treating common diseases, including cardiovascular disease, cancer, rheumatoid arthritis, ischemia, pancreatitis, hemochromatosis, kwashiorkor, disorders of prematurity and disease of old age. Antioxidants deactivate certain harmful effects of free radicals in the human body due to biological peroxidation, and thus prevent protection against cell damage. The book is of considerable interest to scientists working in the materials and foodstuff industries, and to researchers seeking information on the connection between diet and health, and to those developing new drugs to combat diseases associated with oxidative stress. It is important also throughout the non-medical world, especially to the work force within the affected industries. - Examines research in separate fields of biochemical science and technology and integrates it on a basis of the common mechanisms of peroxidation and antioxidant action - Applies present knowledge of antioxidants to our understanding of their role in preventing and treating common diseases, including cardiovascular disease, cancer, rheumatoid arthritis and others

Book Antioxidants in Food

Download or read book Antioxidants in Food written by Jan Pokorny and published by CRC Press. This book was released on 2001-04-12 with total page 412 pages. Available in PDF, EPUB and Kindle. Book excerpt: Antioxidants are an increasingly important ingredient in food processing. Their traditional role is, as their name suggests, in inhibiting the development of oxidative rancidity in fat-based foods, particularly meat and dairy products and fried foods. However, more recent research has suggested a new role in inhibiting cardiovascular disease and cancer. Antioxidants in Food: Practical Applications provides a review of the functional role of antioxidants and discusses how they can be effectively exploited by the food industry. The first part of the book looks at antioxidants and food stability with chapters on the development of oxidative rancidity in foods, methods for inhibiting oxidation, and ways of measuring antioxidant activity. Part 2 looks at antioxidants and health, including chapters on antioxidants and cardiovascular disease, their antitumour properties, and bioavailability. A major trend in the food industry, driven by consumer concerns, has been the shift from the use of synthetic to natural ingredients in food products. Part 3 looks at the range of natural antioxidants available to the food manufacturer. The final section of the book looks at how these natural antioxidants can be effectively exploited, covering such issues as regulation, preparation, antixoxidant processing functionality and their use in a range of food products from meat and dairy products, frying oils and fried products, to fruit and vegetables and cereal products.
