Book excerpt: According to the presented studies, the health condition of animals in rearing and breeding should be regularly monitored. This would allow early detection of delicate deviations in the body of clinically healthy individuals. Unfortunately, regular monitoring of the health of animals in commercial production is not performed. It follows that this type of research should be an introduction to further, more inquisitive steps. This can form the basis for further courses of action, indicating which organs or tissues field doctors or researchers should be interested in and what to pay attention to in order to find the correct answer, concerning the situation in the animal body. In the future, we should determine biomedical markers for use in precision veterinary medicine. In human medicine, this has been practiced with great success. The problem, however, is that we are getting to know more and more substances produced by mold fungi. This causes a build-up of new interpretative problems, causing health conditions (diagnosis), as well as analytical problems. To fully understand the results we need new techniques to assess toxicological and chemical hazards, including those related to undesirable substances. We need a solid knowledge of the biological pathways underlying the toxicity and tolerance to interference factors toxicological processes. We hope that the presented study will allow for a better understanding of mycotoxicoses that bother us and our animals, which will allow for more effective preventive actions.

They can also be found in processed foods of plant origin, or by transfer, in food products of animal (milk, eggs, meat and offal). Mycotoxins are of major concern since they can cause acute or chronic intoxications in both humans and animals which are sometimes fatal. Many countries, particularly in Europe, have set maximum acceptable levels for mycotoxins in food and feed. The book reviews the latest literature and innovations on important aspects of mycotoxins, e.g. mycotoxin producing fungi and the related ecosystems, mycotoxin occurrence, toxicity, analysis and management. Quantitative estimations of impacts of climate change on mycotoxin occurrence have been made recently, using predictive modelling. There is also a growing interest in the occurrence and toxicity of multiple mycotoxins in food and feed, including emerging or modified forms of mycotoxins. Innovative tools were also developed to detect and quantify toxinogenic fungi and their toxins. In this book, the authors increase the public awareness of the implications of certain types of mycotoxins exposure to promote the health of livestock as well as the general public; an analysis of trichothecens (TCEs), a large group of mycotoxins, and their impact on lifestock health and production are also examined, as well as the occurrence of mycotoxins in animal products such as goat milk. Different strategies implemented for the analysis of a wide spectrum of mycotoxins, as well as their advantages and disadvantages are provided by the authors. Mycotoxins occur more frequently in areas with a hot and humid climate, favourable for the growth of molds, they can also be found in temperate zones.In comparison to monogastric species, ruminant animals are generally less susceptible to the adverse effects caused by contamination of feeds with mycotoxins because presence of rumen microflora in rumen. However, a number of mycotoxins resist rumen degradation, causing distinct clinical signs of intoxication. Dairy cattle can be exposed to different number of mycotoxins because complex feeding diet originating from different feed materials such as roughage and concentrates. Exposure of diary catte to these mycotoxins may result in unexpected health problem. Due to apre-existing negative energy balance, cows in the transition period are considered to be particularly sensitive to the exposure to feeds. The variation of mycotoxinoccurence due to different factors, including agricultural practices and climatic conditions. Aflatoxins (AFs) are found in maize and peanuts, aswell as in tree nuts and dried fruits. OTA is found mainly in cereals, but significant levels of contamination may also occur in wine, coffee, spices and dried fruits. Considering their potential toxic and carcinogenic effects, mycotoxin exposure assessment has particular importance in the context of health risk assessment. The magnitude of a given exposure allows the derivation of the associated risk and the potential for the establishment of a disease. Although food ingestion is considered a major route of human exposure to mycotoxins, other contexts may also result in exposure, such as specific occupational environments where exposure to organic dust also occurs due to the handling of organic materials. Animals could be exposed to mycotoxins through consumption of contaminated feed, subsequently entering in the food chain and thus constituting a source of exposure to humans. Human biomonitoring is considered a new frontier for the establishment of the human internal exposure to mycotoxins.
