There are a great many receipts published from time to time, that in all probability are very good; but we are often loth to try anything entirely new, through fear, not only of t he disappointment, if it should not prove good, but the waste of material, which by a careful housekeeper should be a first consideration. Taking this into consideration, I have been careful of preserving all well-tried receipts, and in collecting such as, in my own judgment and the judgment and experience of my friends, would reach the necessities of all who may desire a good practical receipt book. In all general directions I have tried to be explicit, making them so plain that the most inexperienced can understand. Let all remember that care must be taken in order to produce nice dishes; so that with care and a liberal amount of good material we may all live well at least. Book excerpt: Mrs. Owens of Springfield had the enthusiastic support of her neighbors in compiling her cookbook—it includes a list of their names endorsing her recipes at the beginning of the book. The ladies note that the recipes are original and “choice,” but most important, “the materials called for are within the reach of all, and can be had in any of our western towns.” Because of the still-primitive 19th century transportation system, regional cookbooks like this one began to spring up, created by local cooks frustrated by the lack of availability of ingredients in some national cookbooks. Mrs. Owens cookbook contains several hundred recipes for a wide variety of ingredients and dishes including soups, fish, meat, vegetables, eggs, bread, pastry, cakes, puddings, pickles and preserves, with sweets and desserts encompassing easily half of the contents, as was often the case in cookbooks of the day. The book contains a wealth of advice for marketing, storing foodstuffs, and housekeeping, counseling young housekeepers to always get receipts for bill payments, to keep an inventory of household goods, choose the simplest glassware and crockery patterns that can be easily replaced, and to start simple and be independent. Young mothers should “watch well, and guard well” the notions that their daughters “imbibe” and with which they grow up. Mrs. Porter appears to have been determined not to offend anyone, so “Yankee Fruit Cake” is joined by “Confederate Fruit Cake,” and “Wine Sauce” is balanced by “Temperance Foam Sauce.” The list of entrees confirms the promise of frugality, and indicates what ingredients were available at the time: fresh seafood was plentiful, as were beef, mutton, and game. The chapter on vegetables is diversified and long with many recipes for potatoes (another chapter contains what may be the first printed recipes for Potato Bread), tomatoes, eggplant, pumpkin, beets, turnips, and cucumbers. Half of the book is devoted to cakes, puddings, and sweets. Book excerpt: This volume in the American Antiquarian Cookbook Collection, published in Philadelphia in 1850, is an exhaustive compilation of hundreds of methods, formulas, and recipes for culinary, housekeeping, agricultural, and medical issues of importance in nineteenth century households, assembled by an unknown physician. In his introduction, the “eminent physician” cited as compiler of this fascinating volume states, “There was a time when ladies knew nothing beyond their own family concerns; but in the present day there are many who know nothing about them.” His intention was to supply every possible bit of information about housekeeping, homemaking, farming, and medical care that contemporary women seemed to lack. His work contains hundreds of procedures, advice, and recipes organized in a whimsical hodgepodge without a table of contents or index to guide the reader. For example, a recipe for “an excellent tooth power” is sandwiched in between “a method of cleaning china” and “how to stain paper.” Similarly, “pickling tomatoes” can be found between “means of stopping a runaway horse” and “grafting grapevines.” It makes an engrossing, entertaining read that provides an intriguing portrait of nineteenth century lifestyles. Although many medical entries appear throughout the text, the final 20 percent of the book appears to be an independent and uncredited work entitled The Family Physician—such plagiarism was common in nineteenth century publishing. In fact, the disorganization of the material makes it likely that the entire contents of the book were taken from an existing volume or a number of sources and the “compiler” simply collected other authors' work in this encyclopedic treasury. Rights to the product were eventually bought by John Henry, who added another remedy, Dr. Roger’s Compound Syrup of Liverwort, Tar & Canchalagua, to his collection and created the Manhattan Medicine Company to manufacture and sell the concoctions. The Manhattan Cook-Book is a small volume that is essentially a promotional flyer for the company’s patent medicines. Recipes and recommendations for hair care and personal toiletry are threaded throughout with patent medicine ads, so that page 1 of the content touts Dr. Rogers’ Compound Syrup, and page 2 lists “receipts” for Tea Biscuit, Delicious Lemon Jelly Cake, and Rusks. Every page is headed by an exhortation to, “Take Spalding’s Pills for Costiveness,” “Take Dr. Johnson’s Bitters for Indigestion,” “Use Phalon’s Hair Invigorator for the Hair,” and many more. Recipes for tapioca, coffee cake, and strawberry tartlets are sandwiched in between medical advice (using many of the medicines advertised) for whooping cough, asthma, pneumonia, and other diseases. This charming example provides fascinating insight into contemporary cooking, medicine, and lifestyles.
