This book was released on 2015-06-26 with total page 615 pages. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Miss. Corson's Practical American Cookery and Household Management In submitting this book to the public, the author carries out a long-cherished purpose, which had its inception in a suggestion made to her by the Hon. John Eaton, united-states Commissioner of Education, during a discussion concerning the cookery of America. The fact that the cookery of Europe, and especially of France, enters so largely into the author's scheme of teaching, and of constructing her books already published, was being commented upon; and in response to her statement that this was occasioned by the demands of the public, and not from any lack of variety or excellence in American cookery, the commissioner suggested the preparation of a work sufficiently broad in scope and minute in detail to verify her assertion that genuine American cookery is both wholesome and palatable, and has lost none of the traditional excellence which characterized it in our grandmothers' days. To facilitate the work, the commissioner caused the publication and extended circulation of the following correspondence: - To the Hon. John Eaton, U.S. Commissioner of Education, Bureau of Education, Deft, of the Interior, Washington, D.C. Dear Sir, - I venture to ask your help in an educational matter of general public interest, and trust you will afford me such assistance as lies in your power. I have been, as you are aware, engaged for the past four years in the training of young women and girls in domestic economy, numbering among my pupils many ladies of our most prominent families. Book Food and Drink in American History 3 volumes

Download or read book Food and Drink in American History 3 volumes written by Andrew F. Smith and published by Bloomsbury Publishing USA. This book was released on 2013-10-28 with total page 1715 pages. Available in PDF, EPUB and Kindle. Book excerpt: This three-volume encyclopedia on the history of American food and beverages serves as an ideal companion resource for social studies and American history courses, covering topics ranging from early American Indian foods to mandatory nutrition information at fast food restaurants. The expression "you are what you eat" certainly applies to Americans, not just in terms of our physical health, but also in the myriad ways that our taste preferences, eating habits, and food culture are intrinsically tied to our society and history. This standout reference work comprises two volumes containing more than 600 alphabetically arranged historical entries on American foods and beverages, as well as dozens of historical recipes for traditional American foods; and a third volume of more than 120 primary source documents. Never before has there been a reference work that coalesces this diverse range of information into a single set. The entries in this set provide information that will transform any American history research project into an engaging learning experience. Examples include explanations of how tuna fish became a staple food product for Americans, how the canning industry emerged from the Civil War, the difference between Americans and people of other countries in terms of what percentage of their income is spent on food and beverages, and how taxation on beverages like tea, rum, and whisky set off important political rebellions in U.S. history.

Available in PDF, EPUB and Kindle. Book excerpt: Everybody loves a good doughnut. The magic combination of soft dough, hot oil, and sugar coating--with or without sprinkles--inspires a wide range of surprisingly powerful memories and cravings. Yet we are embarrassed by our desire; the favorite food of Homer Simpson, caricatured as the dietary cornerstone of cops, a symbol of our collective descent into obesity, doughnuts are, in the words of one California consumer, a "food of shame." Paul Mullins turns his attention to the simple doughnut in order to learn more about North American culture and society. Both a breakfast staple and a snack to eat any time of day or night, doughnuts cross lines of gender, class, and race like no other food item. Favorite doughnut shops that were once neighborhood institutions remain unchanged--even as their surrounding neighborhoods have morphed into strip clubs, empty lots, and abandoned housing. Blending solid scholarship with humorous insights, Mullins offers a look into doughnut production, marketing, and consumption. He confronts head-on the question of why we often paint doughnuts in moral terms, and shows how the seemingly simple food reveals deep and complex social conflicts over body image and class structure. In Mullins's skillful hands, this simple pastry provides surprisingly compelling insights into our eating habits, our identity, and modern consumer culture.

Book Food on the Page

  • Author : Megan J. Elias
  • Publisher : University of Pennsylvania Press
  • Release : 2017-04-20

Download or read book Food on the Page written by Megan J. Elias and published by University of Pennsylvania Press. This book was released on 2017-04-20 with total page 305 pages. Available in PDF, EPUB and Kindle. Book excerpt: What is American food? From barbecue to Jell-O molds to burrito bowls, its history spans a vast patchwork of traditions, crazes, and quirks. A close look at these foods and the recipes behind them unearths a vivid map of American foodways: how Americans thought about food, how they described it, and what foods were in and out of style at different times. In Food on the Page, the first comprehensive history of American cookbooks, Megan J. Elias chronicles cookbook publishing from the early 1800s to the present day. Following food writing through trends such as the Southern nostalgia that emerged in the late nineteenth century, the Francophilia of the 1940s, countercultural cooking in the 1970s, and today's cult of locally sourced ingredients, she reveals that what we read about food influences us just as much as what we taste. Examining a wealth of fascinating archival material—and rediscovering several all-American culinary delicacies and oddities in the process—Elias explores the role words play in the creation of taste on both a personal and a national level. From Fannie Farmer to The Joy of Cooking to food blogs, she argues, American cookbook writers have commented on national cuisine while tempting their readers to the table. By taking cookbooks seriously as a genre and by tracing their genealogy, Food on the Page explains where contemporary assumptions about American food came from and where they might lead.

Download or read book Art and Appetite written by Annelise K. Madsen and published by Yale University Press. This book was released on 2013-12-10 with total page 250 pages. Available in PDF, EPUB and Kindle. Book excerpt: " Food has always been an important source of knowledge about culture and society. Art and Appetite takes a fascinating new look at depictions of food in American art, demonstrating that the artists' representations of edibles offer thoughtful reflection on the cultural, political, economic, and social moments in which they were created. Using food as an emblem, artists were able to both celebrate and critique their society, expressing ideas relating to politics, race, class, gender, and commerce. Focusing on the late 18th century through the Pop artists of the 20th century, this lively publication investigates the many meanings and interpretations of eating in America. Richly illustrated, Art and Appetite features still life and trompe l'oeil painting, sculpture, and other works by such celebrated artists as William Merritt Chase, John Singleton Copley, Elizabeth Paxton, Norman Bel Geddes, Stuart Davis, Edward Hopper, Alice Neel, Wayne Thiebaud, Roy Lichtenstein, and many more. Essays by leading experts address topics including the horticultural and botanical underpinnings of still-life paintings, the history of alcohol consumption in the United States, Thanksgiving, and food in the world of Pop art. In addition to the images and essays, this book includes a selection of 18th- and 19th-century recipes for all-American dishes including molasses cake, stewed terrapin, rice blancmange, and roast calf's head.
