Book excerpt: Excerpt from Market Diseases of Fruits and Vegetables: Potatoes The so-called late or main-crop potatoes, which come from the Middle Atlantic and Northern States, are tubers which either have been allowed to mature naturally with the maturing vine or have been allowed to lie in the soil for 10 to 14 days to give opportunity for cork development in the case of those vines which have been killed prematurely by frost, destructive animals, or parasites or have been killed intentionally with chemicals to hasten maturity of the tubers. Such tubers have a well-developed thick and tough cork layer and consequently are suitable for storage. If they are stored at relative humidities of 65 to 95 per cent and at temperatures between 36° and 41° F., there is a relatively short period of high initial water loss, followed by moderate shrinkage during the remainder of the storage period due largely to water loss and to a much lesser extent to di gestion and respiration. Firmness in a potato tuber, therefore, depends to a great e nt upon the stage of maturity of the tuber at the time of harvest, he conditions to which it is exposed after harvest and in storage, and the length of the period that has elapsed between harvest and the examination of the tuber. Texture and color of the cork also determine the market qualities of tubers. In netted varieties good development of netting, and in red varieties good development of color, constitute desirable market qualities.
