Book excerpt: Sausages are privileged foods due to their diversity, nutritional value, deep roots in the culture of the peoples and economic importance. In order to increase the knowledge and to improve the quality and safety of these foods, an intense research activity was developed from the early decades of the past century. This book includes ten research works and a review showing important and interesting advances and new approaches in most of the research topics related to sausages. After an editorial of the Editor reflecting the aims and contents of the book, the initial five chapters deal with microbiological issues of the sausage manufacture (characterization and study of the bacterial communities of sausages, study of the metabolism and the technological and safety characteristics of concrete microbial strains, and use of starter cultures to improve the sausage quality). Chemical hazards also receive some attention in this book with a chapter on the optimization of the smoking process of traditional dry-cured meat products to minimize the presence of PAHs. The partial or total replacement of the traditional ingredients in sausages with unconventional raw materials for the obtaining of novel and varied products are the subject of three chapters. Next, a chapter is dedicated to another interesting topic, the search and the essay of natural substitutes for synthetic additives due to the increasing interest of consumers in healthier meat products. Book excerpt: Symbiosis and Ambiguity is the first English edition of the classic study of early object relations by influential Argentinian psychoanalyst José Bleger (1922-1972). It is rooted in Kleinian thinking and rich in clinical material. Bleger's thesis is that starting from primitive undifferentiation, prior to the paranoid-schizoid position described by Klein, autism and symbiosis co-exist as narcissistic relations in a syncretic ‘agglutinated’ nucleus. In symbiosis part of the mind is deposited in an external person or situation; in autism it is deposited in the patient's own mind or body. The nucleus is ambiguous and persists in adults as the psychotic part of the personality. Symbiosis tends to immobilise the analytic process, so the analyst must mobilise, fragment and discriminate the agglutinated nucleus, whose ambiguity tends to ‘blunt’ persecutory situations. The psychoanalytic setting functions as a silent refuge for the psychotic part of the personality, where it creates a ‘phantom world’. At some point, therefore, the setting itself has to be analysed and the analytic relationship de-symbiotised, as Bleger observes in a celebrated chapter on the setting. José Bleger’s work demonstrates the need to analyse early narcissistic object relations as they arise clinically, especially in the setting. More widely, he regards undifferentiation and participation as operating throughout life: in groups, institutions, and society as a whole.

However, excessive amounts of fertilizer application can contribute to groundwater pollution, greenhouse gas emissions, eutrophication, deposition and disruptions to natural ecosystems, and soil acidification over time. Small farmers in many countries think inorganic fertilizers are expensive and degrade soils, and thus policymakers want to promote organic instead of inorganic fertilizers. To develop practical fertilizer recommendations for farmers, yield responses to applied fertilizers from inorganic and organic sources, indigenous nutrient supply from soil, and nutrient use efficiency require consideration. There is a lack of sufficient scientific understanding regarding the need and benefit of integrated nutrient management (i.e., judicious use of inorganic and organic sources of nutrients) to meet the nutrient demand of high-yielding crops, increase yields and profits, and reduce soil and environmental degradation. Inadequate knowledge has constrained efforts to develop precision nutrient management recommendations that aim to rationalize input costs, increase yields and profits, and reduce environmental externalities. This Special Issue of the journal provided some evidence of the usefulness of integrated nutrient management to sustain soil resources and supply nutrients to crops grown with major cereal and legume crops in some developing countries.
