Book The Sushi Economy

Download or read book The Sushi Economy written by Sasha Issenberg and published by Penguin. This book was released on 2007-05-03 with total page 352 pages. Available in PDF, EPUB and Kindle. Book excerpt: The highly acclaimed exploration of sushi’s surprising history, global business, and international allure One generation ago, sushi’s narrow reach ensured that sports fishermen who caught tuna in most of parts of the world sold the meat for pennies as cat food. Today, the fatty cuts of tuna known as toro are among the planet’s most coveted luxury foods, worth hundreds of dollars a pound and capable of losing value more quickly than any other product on earth. So how did one of the world’s most popular foods go from being practically unknown in the United States to being served in towns all across America, and in such a short span of time? A riveting combination of culinary biography, behind-the- scenes restaurant detail, and a unique exploration of globalization’s dynamics, the book traces sushi’s journey from Japanese street snack to global delicacy. After traversing the pages of The Sushi Economy, you’ll never see the food on your plate—or the world around you—quite the same way again.

Based on countless interviews over an extended period by a critic who had been better known for his comfort food expertise, marvelously retaining the maestro’s pleasantly down-to-earth voice, and amply illustrated with color photos, here is a belated surprise gift to all serious lovers of sushi who must rely on the vernacular.

Book excerpt: A playful collection of over 85 Vietnamese and Viet American dishes and immersive travel photography from Top Chef alum Tu David Phu that blends the Oakland native’s modern culinary style with the food wisdom from his refugee family. “Stripped of Oriental exoticism, this is a cookbook infused with the intense flavors of refugee kitchens and the inauthentic authenticity of the diaspora.”—Viet Thanh Nguyen, author of Pulitzer Prize winner The Sympathizer Tu David Phu trained in the nation’s top restaurants only to realize the culinary lessons that truly impacted him were those passed on by his parents, refugees from Phú Quôc. In his hometown of Oakland, California, his parents taught him hard-won lessons in frugality, food-covery cooking, and practical gill-to-fin eating. Centered around Tu’s childhood memories in the diverse Bay Area and family stories of life on Phú Quốc island, The Memory of Taste explores the Phu family’s ability to thrive and adapt from one coastal community to another. With tried-and-true tips like how to butcher a fish, tastebud-tingling flavor combinations, and stunning photographs, Tu guides both novice and experienced chefs alike in his take on Viet cooking, including: • Staples in every Vietnamese kitchen like Cơm Tấm (Broken Rice), Dán Sả (Lemongrass Paste), and Nước Mắm Cham (Everyday Fish Sauce) • Seafood dishes that utilize the less “desired” parts like Huyết Cá Tái Chanh (Tuna Bloodline Tartare), Canh Chua Đầu Cá Hồi (Hot Pot-style Salmon Head Sour Soup), and Xương Cá Hồi Ghiên Giòn (Fried Fish Frames) • Fine-dining dishes from Tu’s pop-up days like Gỏi Cuốn Cá Cornets, Mì Xào Tỏi Nấm Cục (Truffled Garlic Noodles), and Bánh Canh Carbonara • Adapted recipes from new traditions like Bánh Ít Trần (Sticky Rice Dumplings), Cơm Cua Hấp (Dungeness Crab Donburi), and Phở Vịt Nướng (Roasted Duck Phở) The Memory of Taste is Tu’s story of returning to his roots and finding long-hidden culinary treasure. In his debut cookbook, Tu offers readers a chance to enjoy the bounty of his parents’ lessons, just as he has.

Book My Lockdown Cookbook

    Book Details:
  • Author : Colin Skinner
  • Publisher : Austin Macauley Publishers
  • Release : 2023-11-10
  • ISBN : 1398494828
  • Pages : 201 pages

Download or read book My Lockdown Cookbook written by Colin Skinner and published by Austin Macauley Publishers. This book was released on 2023-11-10 with total page 201 pages. Available in PDF, EPUB and Kindle. Book excerpt: Want to learn to cook? Don’t know where or how to start? Try this! I am not a professional chef. I am just a food lover who has learnt to cook good home-food! It’s taken me a while, perfecting each of these dishes to the point that they are repeatable. So, if I can cook these recipes, then so can you. You do not need a huge kitchen with endless cupboards full of stuff. Just a few essential things, like a pestle and mortar and a spice grinder, together they make most curries reasonably quick and easy to make; a selection of good sharp knives and a sharpener; a few metal oven trays, a few oven dishes, and a few pots and pans. I have always enjoyed good food and was fortunate to work in a job that kept me fit. Home cooking has always been a normal everyday pleasure and even after a long days work I would happily come home and cook a stir fry for the family in 30 minutes. Not only did it help clear my mind, it also provided a healthy meal after a tough day. When the pandemic struck, I was home like everyone else. So the radio was a constant companion during the long quiet days. Slowly, listening to talk shows, I realised how difficult it was for many families. How do we feed the family, every day, three times a day? The need to learn to cook became a serious one. Home cooked food is also healthy food, so to begin to learn has that added bonus too. So, with encouragement from family and friends, I decided to write My Lockdown Cookbook hoping I might help just some of those families who wanted to learn but did not know how to. If I can help some people, in some small way, to begin to enjoy home cooked food, then I will be very happy.

Book Remain in Love

Download or read book Remain in Love written by Chris Frantz and published by St. Martin's Press. This book was released on 2020-07-21 with total page 320 pages. Available in PDF, EPUB and Kindle. Book excerpt: Two iconic bands. An unforgettable life. One of the most dynamic groups of the ‘70s and ‘80s, Talking Heads, founded by drummer Chris Frantz, his girlfriend Tina Weymouth, and lead singer David Byrne, burst onto the music scene, playing at CBGBs, touring Europe with the Ramones, and creating hits like “Psycho Killer” and “Burning Down the House” that captured the post-baby boom generation’s intense, affectless style. In Remain in Love, Frantz writes about the beginnings of Talking Heads—their days as art students in Providence, moving to the sparse Chrystie Street loft Frantz, Weymouth, and Byrne shared where the music that defined an era was written. With never-before-seen photos and immersive vivid detail, Frantz describes life on tour, down to the meals eaten and the clothes worn—and reveals the mechanics of a long and complicated working relationship with a mercurial frontman. At the heart of Remain in Love is Frantz’s love for Weymouth: their once-in-a-lifetime connection as lovers, musicians, and bandmates, and how their creativity surged with the creation of their own band Tom Tom Club, bringing a fresh Afro-Caribbean beat to hits like “Genius of Love.” Studded with memorable places and names from the era—Grace Jones, Andy Warhol, Stephen Sprouse, Lou Reed, Brian Eno, and Debbie Harry among them—Remain in Love is a frank and open memoir of an emblematic life in music and in love.
