Book excerpt: The industrialization of food preservation and processing has been a dramatic development across Europe during modern times. This book sets out its story from the beginning of the nineteenth century when preservation of food from one harvest to another was essential to prevent hunger and even famine. Population growth and urbanization depended upon a break out from the ’biological ancien regime’ in which hunger was an ever-present threat. The application of mass production techniques by the food industries was essential to the modernization of Europe. From the mid-nineteenth century the development of food industries followed a marked regional pattern. After an initial growth in north-west Europe, the spread towards south-east Europe was slowed by social, cultural and political constraints. This was notable in the post-Second World War era. The picture of change in this volume is presented by case studies of countries ranging from the United Kingdom in the west to Romania in the east. All illustrate the role of food industries in creating new products that expanded the traditional cereal-based diet of pre-industrial Europe. Industrially preserved and processed foods provided new flavours and appetizing novelties which led to brand names recognized by consumers everywhere. Product marketing and advertising became fundamental to modern food retailing so that Europe’s largest food producers, Danone, Nestlé and Unilever, are numbered amongst the world’s biggest companies.

Dans le chapitre introductif, la problématique de la thèse est construite sur la base d'une critique des travaux menés sur les I.A.A. au sein de l'économie rurale et de l'économie industrielle. Ensuite, la méthodologie mise en œuvre est présentée à partir des "théories de la régulation". La première partie traite de la logique de transformation des I.A.A. et de la consommation alimentaire depuis la deuxième guerre mondiale. Elle met en évidence le développement d'une accumulation intensive au milieu des années 60 et d'une crise à partir de la fin des années 70. Malgré un taux de profit normal ou supérieur aux autres industries, on observe un besoin de financement externe. Dans un premier temps, le développement de l'industrie agroalimentaire est replace dans la division sociale du travail, ce qui permet d'élaborer une grille d'interprétation de la genèse et de la modification des canaux de financement. Il ressort de l'analyse du financement externe propre, du financement public et de l'endettement que la logique de la transformation de ces circuits de financement ne dérive pas du rôle que jouent les I.A.A. dans l'alimentation, mais de leur poids vis-à-vis de l'agriculture. En effet, pour favoriser un accroissement des débouchés aux produits agricoles par la transformation en biens alimentaires, les pouvoirs publics. Ont mis en place un système institutionnel de financement au niveau sectoriel qui est cohérent avec le développement d'une économie d'endettement. Malgré la dégradation des structures de bilan, la crise de développement que connaissent les I.A.A. dans les années 80 n'est pas d'ordre financier mais réel.
